Protein Packed Pancakes

For someone who enjoys eating relatively clean, pancakes are usually out of the picture for me. Not any more though! I’ve discovered a way to make completely gluten free, dairy free, protein packed pancakes that actually taste great! 

What you will need: (serves 2)
2 ripe bananas
2 eggs
Protein powder (I use vegan pea protein powder that is vanilla flavored-the brand is naturade)
Almond milk
Cinnamon 
Optional: toppings of your choice 
 
Mash the bananas and then mix in the eggs, then the protein powder and cinnamon. If the batter appears too thick, add almond milk until you get a pancake batter consistency. Cook in a pan, like you would regular pancakes (use cooking spray), but remember to make them smaller in size because otherwise they will not hold together. Flip when they start to bubble. For toppings, I used PB2 peanut butter powder and mixed it with a splash of water to create a low fat peanut butter sauce. On top, you can add fruit, chocolate, honey, or enjoy them plain!
