Drunk Melon Balls with Stoli Gluten Free

It’s July 4th weekend and you’re busy lining up which BBQ’s you’ll be attending! Or hey, maybe it’s time for your big annual bash. Well, whether you’re playing host or simply a party guest, July 4th is all about summertime fun, friends & family, and cocktails!

I thought about making patriotic cocktails in honor of this wonderful holiday, but instead I opted for something a bit more fun! Introducing Drunk Melon Balls! I love fruity cocktails, and I’ve seen variations of this recipe done many a time, so I decided it was time for me to give it a shot. Not only is this recipe fun and unique, but it’s simple to make! You’ll be the most popular person at your party for sure; I made the Drunk Melon Balls for my friends this weekend and I had everyone asking me how it was done!

What You Will Need:
1 Watermelon
1 Cantaloupe
1 Honeydew
1 Bottle Stoli Gluten Free
Optional: Pineapple Juice
Melon Baller

What You Will Do:

Slice open your melons!
With your Melon Baller, scoop balls of melon and place into a large bowl.
Once finished, pour Stoli Gluten Free over the melon balls. Pour however much it takes to submerge the balls!
Cover, and place in a refrigerator for a minimum of 2 hours. The outcome is best when you let the balls chill overnight!
Take out, and enjoy!

Blueberry Waffles

I’m always making waffles and pancakes, but I’ll admit… I often use gluten-free pancake or waffle mix for the sake of time! Well, this week I decided to get creative and make my own from scratch. The recipe is simple, and only takes 15 minutes or so to prepare! Sometimes gluten-free waffles can be SUPER dense, but I’m happy to announce this recipe makes waffles that are super light and airy, so you can indulge in a few without feeling too full. Or guilty… Oh, and they are dairy-free too!

What You Will Need:

2 Eggs
2 Cups All-Purpose GLUTEN-FREE Flour
1 3/4 Cup Coconut Milk
1/2 Cup Vegetable Oil
1 Tablespoon White Sugar
4 Teaspoons Baking Powder
1/4 Tsp Salt
1/2 Tsp Vanilla Extract
However many blueberries you want!

What You Will Do:

In a large bowl, combine GF Flour, White Sugar, Baking Powder, and Salt.
Separately, combine Coconut Milk, Vegetable Oil, Vanilla Extract.
Whisk eggs together and add to wet ingredients.
Add your wet ingredients to your dry ingredients and stir until smooth.
Add your blueberries!
Pour batter into waffle maker, and let the maker do it’s magic!
Stack your waffles, add your toppings, and serve!

Caramelized Banana

As I’m sure you’ve seen, bananas are used quite often in my NOBREAD recipes! Typically, they are used as an ingredient to give my breakfast creations an extra kick of flavor, but bananas are also the perfect topping. Whenever I see caramelized bananas, I always want to try them. However, I am dairy-free, and anything caramelized is typically coated in butter. Well, to my dairy-free friends, this recipe for caramelized bananas uses vegan butter, so you can enjoy them too!

What You Will Need:
2 tbsp Dairy-free Butter
2 tbsp Brown Sugar
1 or 2 Bananas

What You Will Do:
Heat a skillet.
Add butter and brown sugar to the skillet, and mix it together as it melts!
Slice your banana however you please, and add it to the skillet!
Cook for ~2 minutes, or until bottom is brown, and then flip!
Cook again for ~2 minutes.

That’s it! It’s easy! Add your banana bites to your dairy-free ice cream, and have yourself an ice cream sundae!

Banana Bread

Whether it’s because I’m making my banana pancakes or simply using a banana as a topping or garnish in one of my dishes, bananas are a necessary component in many of my NOBREAD recipes. This week, I had visitors in town, and like any good hostess, I stocked my home with NOBREAD essentials. Unfortunately, I overbought most grocery items, and much of my food went bad! I was slightly disappointed; that was until I realized my bananas were going bad too, and the only thing that makes me happier than perfectly ripe bananas are bananas that are going bad! Why? Well, these bananas are GOLD in the world of banana-bread making, and I’ve had a new recipe right up my sleeve that I’ve been dying to try.

What You Will Need:
2 Cups All-Purpose GLUTEN FREE Flour
¾ Cup Brown Sugar
3 RIPE Bananas
2 Eggs
¼ tsp Salt
1 tsp Baking Soda
½ Cup Dairy Free Butter
Optional: GF/DF choc chips!

What You Will Do:
Preheat oven to 350 degrees.
In a large bowl, combine gluten-free flour, baking soda, and salt.
In a separate bowl, melt butter and combine with brown sugar.

Add butter/sugar to large bowl and mix.
In two separate bowls, mash 3 bananas and whisk two eggs.
Combine bananas and eggs in large flour bowl and mix until smooth.

If you want to make chocolate chip banana bread, now’s the time to add your GF/DF chocolate chips!
Pour batter into a 9.5 in x 5.5 in bread pan.

Place in the oven for ~30 minutes, or until the top of your bread is nice and brown. If you stick a toothpick or knife into the bread, it should come out nice and clean! Otherwise, let it cook a bit longer!
Let bread cool for ~15 minutes.
Slice and serve!

Savory Rosemary Waffles

I’m the type of person that will almost always choose savory over sweet when it comes to breakfast. But no matter how great eggs and bacon are, they can get kind of boring. Since I am totally behind the game on experimenting with waffles, I thought it was about time and what better way to do so than with my bestie/partner in crime/fellow food blogger Breakfast with Bex who is finally back in DC for good?

Like the food-obsessed people we are, we spent Saturday night concocting the perfect recipe for the next day’s brunch and these waffles did not disappoint. The shining star is hands down the rosemary-infused olive oil, so that is kind of a must.

Whenever I get fresh herbs, I always chop them up, throw them in an ice cube tray and then fill with olive oil so I can have infused olive oils on deck whenever I could possibly need them. You can do this, or you can let some rosemary and olive oil sit together for a few hours. Either way, your waffles will turn out delicious.

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Servings: 7-8 waffles

Ingredients:
1 1/4 cup unsweetened almond or coconut milk
1 teaspoon apple cider vinegar
1 teaspoon rosemary
1/4 cup olive oil
1/2 cup rolled oats
1 3/4 cup all-purpose gluten free flour
1 1/2 teaspoon baking powder
1 pinch sea salt
1 pinch pepper
1 pinch dried basil
1 pinch dried sage

Directions:

  1. Make rosemary-infused olive oil by combining the two ingredients and let sit overnight. Or you can do what I did and combine rosemary and olive oil in ice cube trays and freeze until ready.
  2. Combine milk and apple cider vinegar in a small bowl. Stir to combine and let sit for a couple minutes.
  3. Add rosemary-infused olive oil to milk and vinegar mixture, stir to combine.
  4. In a large bowl, combine oats, flour, baking powder, salt, pepper, dried basil, and dried sage.
  5. Add wet ingredients to dry and combine until fully incorporated.

  1. Heat waffle iron.
  2. When waffle iron is ready, place batter inside and cook until your waffle iron says they’re done.
  3. When waffles are cooked, place on a cooling rack until ready to eat so they stay crisp.
  4. Top with bacon, egg, cheese and whatever other toppings you desire.

Peanut Butter Pancakes

Everyone who knows me knows that I am a total chocaholic! Well, I’ve been trying to cut back on the amount of chocolate I eat, which has been hard but going well. But, as it goes, one vice needs to be replaced with another, and I reunited with an ancient vice of mine, peanut butter.  I’m totally hooked! Well, I decided it was time to take my new favorite food and incorporate it into my favorite breakfast… (gluten-free) pancakes! The best part? The recipe is simple and you probably have all of the ingredients in your cabinet!

What You Will Need:
1 cup Gluten-Free flour
2 12 teaspoons baking powder
12 teaspoon salt
12 cup peanut butter (I use Justin’s!)
2 tablespoons sugar
2 tablespoons vegetable oil
1 large egg
1 cup milk (I use coconut or almond!)

What You Will Do:
In one bowl, combine gluten-free flour, baking powder, and salt.
In a separate bowl, combine peanut butter, sugar, and vegetable oil.
Whisk egg and combine with milk. Add this mixture to the peanut butter mix.
Slowly, pour your combined wet ingredients into the bowl of GF dry ingredients.
Whisk together until smooth.
Lightly coat skillet with vegetable oil or cooking spray.
Pour on your pancake batter. The size is of your choosing! I recommend no more than 4″ diameter.
When top of pancake starts to bubble, flip! Cook for ~45 seconds.
Stack your pancakes, and add your toppings!!

Calamigos Ranch

The Ranch:

It’s official: Calamigos Ranch does it all and brings new meaning to “any occasion.” Equipped with an incredible fitness studio, luxury pools, fire pits, a rehab center, a cafe and more, Calamigos literally has something for everyone. I had the opportunity to stay at the ranch last week, and I’m happy to report my findings!

If you are headed to the ranch for a little staycation or a night or two get-away like I was, Calamigos is the spot for you. The pool and lounge area is tranquil and you feel totally at peace; I had to keep reminding myself that I was only 45 minutes away from home! I went during the week, and had the luxury of seeing the ranch at its quietest, but I am told the ranch is full on the weekends and quite lively.

There were several attributes that stood out to me about the ranch. First, the farm fresh produce that was growing outside our door! Strawberries and artichokes, two of my favorite foods, were growing in a mini garden just steps away from my bungalow, and I was so tempted each morning to pick my own. Second, the vicinity. Prior to my trip, I heard that Calamigos was the ultimate wedding spot, and now I understand why. The ranch can do up to 4 weddings at a time on the property, and the property is so huge and beautiful; each wedding area has it’s own vibe and charm! Hanging flowers, beautiful trees, nighttime lights, lakes and more create a serene and beautiful ambiance.

The Food:

We all know that the dining experience makes or breaks a travel experience for me, and I’m happy to announce the dining at Calamigos is super gluten-friendly. There are no formal restaurants at the ranch, but there is a poolside menu and an in-room dining menu. Upon hearing that I was GF and DF, I was flattered to receive my very own menu that featured everything from GF bread and pancakes to fruit bowls and acai bowls, and more!

Breakfast is the most important meal of the day, and Calamigos made sure I was fed the ultimate breakfast each morning. My favorites? The crab hash with a poached egg (no hollandaise for me), acai bowl with GF granola and DF yogurt, eggs and grits, GF buckwheat pancakes, and GF bread (made with almond flour)!

I have to talk abut the pancakes! Made with buckwheat flour, these pancakes were sweet and smooth tasting, and HUGE! Anyone who knows me knows that pancakes are my favorite meal to make, and I am newly inspired to make pancakes that big! My friend eats both gluten and dairy, and what amazed me the most about Calamigos was that they made he and I the exact same meals each day, but brought two versions of it. One version had gluten and dairy for him, and the other version lacked the allergens for me! This kind of hospitality reminds me of the days when I was first diagnosed with my food intolerances, and my mom spent hours making me my own version of whatever my family was eating that night.

If you stay at the ranch for the day, the poolside and in-room dining menus offer a plethora of gluten-free options, and I highly recommend the salads!

Malibu Cafe:

Malibu Cafe is one of the cutest restaurants/cafes I’ve seen to date. It is completely outdoors, and located just a couple hundred yards from the Calamigos Ranch property. The ambiance at Malibu Cafe is great! The sounds of country music fill the space, and between the dining area, life-size games and statues, paddleboats, ping pong tables, and more, it is the perfect venue to bring a date, celebrate a family gathering, take the kids, or host your next event!

Most importantly, Malibu Cafe serves a ton of gluten-free options! At lunch, the salads are the way to go. They are huge, and you can make each salad a bit more filling by adding a protein of your choice. The cobb salad was definitely a stand out, as well as the mixed greens salad with chickpeas and avocado. The brussels sprouts, however, stole the show and I ordered them at every meal! Dressed with balsamic vinaigrette, the sprouts were crispy and tasty. They come with goat cheese, but if you are dairy-free like myself, you can order them with no cheese!

For dinner, I recommend the 8oz salmon with your choice of sides, as well as the chicken. If you order the chicken, be prepared… or be hungry! The chicken is served whole and accompanied by a side of your choice (I love the tricolor cauliflower), and it is a large enough portion to serve 2… or 3 or 4!

The Helicopter Ride:

Everyone who knows me knows about my fear of heights. So when Calamigos Ranch offered us a helicopter ride, as excited as I was, I was also petrified! But who could turn down a private helicopter tour of Malibu and the West Side of LA?? After going over safety and helicopter etiquette, I was ready to go, and I’m so glad I went! It was such an incredible treat seeing the beautiful LA landscape from the sky, and flying over some of my favorite restaurants and hotspots!
