Naturally More Protein Packed Peanut Butter Balls

I am especially excited about the recipe I made this week. Forever now I’ve wanted to make chocolate covered peanut butter balls, but I haven’t found a recipe I’ve loved just yet. To make the perfect peanut butter ball, some sort of flour or carb is needed (people often use graham crackers), and I wanted my balls to be as low-carb as possible! Well after a little trial and error, I came up with the perfect three-ingredient recipe! Yes, I said THREE ingredients!

What You Will Need:
1 Jar (16 oz) Naturally More Extra Protein Peanut Butter Spread
*With Plant Protein and Flax
2/3 Cup Honey
2/3 Cup Coconut Flour

What You Will Do:
In a large bowl, mix together your honey and coconut flour.
Once combined, add your Naturally More Peanut Butter.

Stir until all ingredients are combined.
Line a baking sheet with parchment paper.
With a spoon, scoop your batter and roll into balls! You should aim to make 24 balls.

Chill in a refrigerator for 30 minutes before serving!
From here, you can eat your balls as is, OR roll a few in melted chocolate!

Sweet Coconut Oatmeal

If anything can make me a morning person, it’s a bomb breakfast. Oatmeal is always a good go-to since its quick, easy, healthy (and of course gluten-free). This Sweet Coconut Oatmeal recipe is one for the books! I love the hints of cinnamon, and coconut flakes can do no wrong in my book. Whip up your own and get creative with the toppings!

What You Will Need:
14 oz Coconut Milk
1 Cup Rolled Oats
2 T Honey
1/4 Cup Coconut Flakes
1 tsp Coconut Sugar
1 tsp Cinnamon

What You Will Do:

Pour the coconut milk into a saucepan and bring to a gentle boil over medium heat.
Once boiling, mix in the cup of oats and honey.
Stir together and lower the heat. Let it simmer for about 15 minutes or until the milk has been fully absorbed.

Scoop the oatmeal into a bowl and add your toppings! We went with a pinch of coconut sugar, a pinch of cinnamon, and a handful of coconut flakes.

Paleo Blueberry Banana Bread

A girl can never have too many (gluten-free) banana breads in her life, trust me, and today I was feeling blueberry. This bread did not disappoint either, and with only ten super clean ingredients, its a win-win! I’ll be remaking this beauty very, very soon.

What You Will Need:
1 cup almond meal
1/4 cup coconut flour
1 tsp baking soda
2 Eggs
1/2 tsp salt
2 tbs coconut oil
2 very ripe bananas, mashed
1/4 cup maple syrup
1 cup fresh blueberries
1 tsp vanilla

What You Will Do:
Preheat oven to 350 degrees F.
In one bowl, mix together all of the dry ingredients.
In another bowl mash the 2 ripe bananas and then whisk in the eggs, melted coconut oil, maple syrup and vanilla.

Combine your wet and dry ingredients, and mix them together in one large bowl. Once combined, add the blueberries. Stir until all the ingredients are throughly combined.
Next, line a bread pan with parchment paper and pour in your ingredients. Now your bread pan is ready for the oven!

Put the bread pan in the oven for 40 minutes.
When time is up, take the pan out and check if your bread is ready by sticking a tooth pick in. If ready, the tooth pick should come out clean and dry! Remove the parchment paper from the pan and let the bread cool for 20 minutes.
Slice and enjoy 🙂

Pro tip: If we had the chance to do it all over again, we would stick to a half cup of blueberries instead of a full.

Roasted Carrots

Roasted carrots are my guilty pleasure. But given that carrots are high in beta carotene and a good source of antioxidant agents, I guess it’s a good guilty pleasure to have?! Especially when you dress your carrots in sweet coconut oil… they’re basically candy! Well it’s time I share my go-to carrot recipe with the world… especially because they are so easy and simple to make!

What You Will Need:

One package of Carrots. (If unpeeled, please peel!)
1-2 T Coconut Oil
Salt + Pepper (Amount is of your choosing)

What You Will Do:

Preheat oven to 425 degrees F
Slice carrots in half or thirds with an extra sharp knife.
Depending on your portion size, coat sliced carrots with 1-2T of Coconut Oil. *For this serving size we used 2T.
Sprinkle with salt and pepper.

Place in the oven and cook for 20 minutes. Flip, and cook for another 20 minutes.
Pair with cooked quinoa and an avocado, and serve!

PALEO Chocolate Brownies

Oh. My. God. I know I’ve bragged about a lot of recipes here on NOBREAD being the best-ever, but this might be my new favorite. Introducing chocolate brownies that are both gluten-free AND paleo! Yes, paleo. How could that be possible? Well, I subbed coconut sugar in for cane sugar, and used honey and almond flour (both are paleo) to come up with this masterpiece, and believe me when I say these taste even better than the gluten-filled brownies of my past. Best of all, it requires few ingredients and after about 15 minutes of prep, and 25 minutes in the oven, the brownies are ready!

What You Will Need:
1/2 Cup Cocoa Powder
1/2 Cup Almond Flour
1/2 Cup Coconut Sugar
1/2 tsp Baking Powder
1/4 tsp Salt
3 Eggs
1/4 Cup Honey
1/4 Cup Melted Coconut Oil
Optional: Paleo Chocolate Chips

What You Will Do:
Preheat your oven to 325 degrees F.
In a large bowl, whisk your 3 eggs together. Pour in your cooled melted coconut oil and honey. Stir until combined.
In a smaller bowl, combine your dry ingredients.

Once mixed, pour the dry ingredients into the bowl of wet ingredients.

Line a small baking tray with parchment paper, and pour in your batter.
Place in the oven and cook for 25 minutes. When the time is up, test with a toothpick and make sure it comes out clean.

Let the brownie cake cool for at least 15 minutes before slicing.
Cut up and serve!

The brownies are rich and gooey and melt in your mouth. The use of honey in recipes is still new to me, but it adds just the right amount of sweet flavor, and is quickly becoming a staple in my recipes. Who knew Paleo could taste so good!?

Breakfast in Bed:

There is an STK in the hotel, and if that isn’t enough, the in-room dining is pretty amazing! For breakfast, I was stoked to see a range of gluten-free items, most of which are gluten-free when you ask for no toast! We ordered the organic eggs with roasted potatoes and turkey bacon and the So Cal Omelette with avocado and no cheese! And no breakfast spread is complete without a side of fruit and smoked salmon. Breakfast in bed done right.

In-room dining is available at all hours of the day, so if you’re like me and have late night room-service cravings, you’ll be happy to know there is a late night menu, too (hello late night fresh popped popcorn)!

Poolside Hangs!

The view from the W is awesome, especially if your room is pool-side. You can see all of Beverly Hills and East LA! Given it’s January and I’m starting to look a little pale, I decided to spend my afternoon by the pool. For lunch, the W has The Backyard, which is part of STK. I recommend the tuna tartar with tamari in place of soy, the shrimp cocktail, or any of the salads with added protein. Note: the Caesar Salad is gluten-free when you ask for no croutons and the STK salad is GF when you ask for no fried shallots. I ordered the STK salad and subbed lobster for the steak, and treated myself to an order of sweet potato fries, too!

My meal was delivered right to my lounge, which just added to my perfect little afternoon. If you don’t want to dine poolside, you can sit on the patio by the bar, and cool off in the shade!
All in, my experience at the W Los Angeles- West Beverly Hills was great! During the Grammy’s, our in-room bartender and waiter couldn’t have been nicer, ensuring our drinks were flowing and food was refilled throughout the show… and the room was simply outstanding. I highly recommend the Awards Season package… it is worth every penny!

Hannah’s Healthy Bakery is a line of gluten-free baking mixes sold locally in Indianapolis and online on Amazon. Not only are the products gluten-free, but they are paleo, too! Hannah’s mission is to provide consumers with foods that are health conscious, and also taste delicious at the same time. I had the opportunity to try several of Hannah’s products this week. I started with the brownies, which were super rich and made for the dark chocolate lover. Second, and the product I was most excited to try, was the Pasta mix! Even in my gluten-eating days I’ve never made my own pasta! The process is super simple, and all you have to do is add eggs and a dash of water!

What You Will Do: 

  • Pour mix into a large bowl and add eggs. Mix until the dough is formed.
    • You will likely add 1-2 T to help mold together.
  • Form dough into a ball, dust your surface with some starch and place dough on starched surface.
    • Also sprinkle some starch on top of the dough. As you roll, if the dough separates, add more starch.

  • Roll dough out very thin in the shape of a rectangle.
  • Using a pizza cutter or knife, slice dough into fettuccine sized noodles.

  • Place in a large pot of boiling water and cook for 3-4 minutes, or until soft and cooked through.

  • Add sauce and toppings of choice and enjoy!

I have to admit, I was skeptical… but it worked! And the pasta was good! My advice: roll the pasta dough as THIN as possible, as it expands when boiled. If you have a pasta machine, definitely use it. The thicker noodles had me full after just a small portion… but maybe that’s a good thing! Mom’s with gluten-free kids, or adults wanting a fun gluten-free date night activity, this pasta mix is for you.

Turmeric Roasted Chickpeas

From tumeric eggs to turmeric chickpeas, turmeric is all the rage in 2017. And it’s no wonder why! Turmeric is a powerful anti-inflammatory and antioxidant and contains properties that boosts brain power and lowers the risk for brain disease. So if you’re thinking it’s about time you start adding turmeric into your diet, I’d say that’s a good idea.

What You Will Need:
1 Can or 1.5 Cups of Chickpeas
1 T Turmeric
½ T Coconut Oil
½ tsp Salt

What You Will Do:
Melt the coconut oil, and add to the bowl of chickpeas.
Add the turmeric and salt, and with your hands or a spoon, mix everything together.
When chickpeas are totally covered, pour onto a tray lined with parchment paper.
Bake chickpeas at 350 degrees F for 45 minutes or until desired crispiness.

And just like that, you’re done! The chickpeas are the PERFECT addition to your salad or grains bowl… or you can even eat them as is!

Extreme Brunching with Stoli Gluten Free

What’s not to love about the weekend? For many, there’s no school or work and most importantly, the weekend means it’s time for BRUNCH! My friends and I are never ones to turn down an “Extreme Brunch” (for the new brunch-ers that means an All-You-Can-Drink get together). Typically these brunches take place at restaurants with loud music and an even louder crowd, but recently we decided there’s no need to go out for an Extreme Brunch when we can throw our own!

This weekend it was my turn to host, and I’d like to think I had all the necessary components to make my brunch a successful one. To start, it’s not a brunch unless you serve Bloody Mary’s!

My Stoli Gluten Free Bloody Mary Recipe:
2 Parts Stoli Gluten Free
4 Parts Tomato Juice
½ Part Lemon Juice
¼ Part Freshly Grated Horseradish
Dash of Worcestershire Sauce, Hot Sauce, Salt & Pepper.
Shake up and serve over ice.

Peanut Butter Banana Bread

My girl Rachel Mansfield is kind of the Queen when it comes to recipes. She’s also the queen when it comes to peanut butter (or other nut butters). So when I needed a little help mastering a flourless banana bread, I turned to her blog and immediately found the answer. Introducing Rachel’s Gluten-Free Peanut Butter Banana Bread.  It was just as delicious as I knew it would be… and my friends at this Monday’s Bachelor Night agreed!

What You Will Need:
3 medium/large ripe bananas
½ cup Justin’s Peanut Butter
3 eggs
1 tablespoon maple syrup
1 tablespoon melted & cooled coconut oil
Splash of vanilla extract
⅓ cup coconut flour
½ teaspoon of baking powder
Toppings: I used banana chips, coconut chips, and dairy-free chocolate chips!

What You Will Do:
Preheat oven to 350 degrees F.
In a large bowl, mash your bananas. Separately, whisk your eggs.
Add your eggs to the bowl of mashed banana, and add in your peanut butter, maple syrup, coconut oil, and vanilla.

Stir until thoroughly combined!
Add your coconut flour and baking powder, and again stir until throughly combined.
Grease or spray your bread pan, and pour the mixture in.
Top your bread with dairy-free chocolate chips!

Place your bread in the now heated oven for 20 minutes. Take out, and add the banana chips and coconut chips to the top.
Rotate the bread and cook for another 15-20 minutes!
To test if your bread is ready, stick a toothpick through the middle and it should come out nice and dry.
Take the bread out and let cool for 15 minutes before removing from the pan.
Slice and serve!
