Cheerios Pancakes? But how!? As a gluten-free person, I’m always trying to find the best gluten-free flours. Yes, All Purpose GF flour does the trick, but almond flour, coconut flour, tapioca, buckwheat and more are all on the market, claiming to be the best for GF! Well, I had an idea. What if I blended my favorite gluten-free cereal to act as my GF flour? Hmm, the blend wouldn’t be thick enough to hold. Ah ha! I’ll combine my blended cereal flour with GF All Purpose Flour! Ladies and Gentleman, just take one look at the results! I think I stumbled upon one of my best recipes yet!
What You Will Need:
1 1/3 Cup Honey Nut Cheerios
1/2 Cup All Purpose GF flour
1 Cup Coconut Milk
1 tsp Vanilla
2 tsp Baking Powder
1/4 teaspoon salt.
What You Will Do:
Pur Cheerios into a blender, and blend totally through. This will make about 1/2 Cup Cheerios ‘Flour”
Add GF Flour, Baking Powder, Salt to the Cheerios Flour and mix.
Separately combine egg, coconut milk, and vanilla.
Add liquid ingredients to dry ingredients and stir through.
Once batter is mixed, pour 4″ pancakes onto griddle.
When the pancakes bubble, flip! Cook for 30 seconds-1 minute (until golden brown) on each side.
That’s it! This recipe yields 8-10 pancakes! When you’re done, top your pancake stack off with syrup, nuts, MORE CHEERIOS, and other toppings of your choosing!
