Ch-ch-ch-ch-ch-chia. I have long spouted the wonders of the chia seed. It’s hydrating, full of fiber, and has been recently found to help with brainpower and function. It is, quite literally, a super seed. So, like all things super, we turn them into pudding. First there was chocolate pudding, then there was bread pudding, and now there is chia pudding. And unlike the others, this pudding is not only tasty but also very, very good for you. (and pretty simple to make…A+ already)
What You’ll Need:
¼ cup chia seeds
1 tbsp vanilla extract
½ tsp sea salt
1 cup almond milk (or any other non-dairy milk)
What You’ll Do:
- Combine all ingredients into a bowl and mix until combined
- Cover and let sit in fridge over night or for ~2-3 hours.
That’s it! In the morning you can add fruit, granola, nuts, etc. to it or you can eat it plain. I personally like it with a pinch of honey drizzled on it. But any way you eat it is going to be delicious (and surprisingly good for you!! Although you wouldn’t guess that from how good it tastes)
