PALEO Chocolate Brownies

Oh. My. God. I know I’ve bragged about a lot of recipes here on NOBREAD being the best-ever, but this might be my new favorite. Introducing chocolate brownies that are both gluten-free AND paleo! Yes, paleo. How could that be possible? Well, I subbed coconut sugar in for cane sugar, and used honey and almond flour (both are paleo) to come up with this masterpiece, and believe me when I say these taste even better than the gluten-filled brownies of my past. Best of all, it requires few ingredients and after about 15 minutes of prep, and 25 minutes in the oven, the brownies are ready!

What You Will Need:
1/2 Cup Cocoa Powder
1/2 Cup Almond Flour
1/2 Cup Coconut Sugar
1/2 tsp Baking Powder
1/4 tsp Salt
3 Eggs
1/4 Cup Honey
1/4 Cup Melted Coconut Oil
Optional: Paleo Chocolate Chips

What You Will Do:
Preheat your oven to 325 degrees F.
In a large bowl, whisk your 3 eggs together. Pour in your cooled melted coconut oil and honey. Stir until combined.
In a smaller bowl, combine your dry ingredients.

Once mixed, pour the dry ingredients into the bowl of wet ingredients.

Line a small baking tray with parchment paper, and pour in your batter.
Place in the oven and cook for 25 minutes. When the time is up, test with a toothpick and make sure it comes out clean.

Let the brownie cake cool for at least 15 minutes before slicing.
Cut up and serve!

The brownies are rich and gooey and melt in your mouth. The use of honey in recipes is still new to me, but it adds just the right amount of sweet flavor, and is quickly becoming a staple in my recipes. Who knew Paleo could taste so good!?
