Cupcake Recipe

Here is an awesome recipe for the Mexican Vegan Hot Chocolate Cupcakes offered at The Little Cupcake Bakeshop in NoLita! The cupcake tastes just like spiced hot chocolate, and will make your kitchen smell delicious!

DRY

1 1/2 cups GF flour blend

3/4 cup cocoa powder

1/2 cup sugar

2 tsp baking powder

1 tsp xanthan gum

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp cayenne pepper

1/2 tsp salt

WET

1 cup almond milk

1/2 cup hot water

1/2 cup vegetable oil

(2 tbsp cornstarch + 2 tbsp water)

1 tbsp apple cider vinegar

1/2 tsp vanilla extract

 

Whisk dry ingredients in a large bowl. In a smaller bowl, combine the wet ingredients. Ass wet to the dry and whisk until just combined. Bake for 15-17 minutes at 300. Makes 12-16 cupcakes
