Uma Temakeria is a brand new, fast-casual sushi shop in Chelsea! The NOBREAD team had the opportunity to stop by the past week and make their own temaki! Temaki are hand rolls, and Temakeria specializes in this portable sushi. It’s basically a seaweed burrito with rice and fillings such as fish and veggies. Temakeria is a new concept to NYC, but super popular in Brazil, where Chef Chris Jaeckle got his inspiration. Chef Jaeckle is famous in the food world having worked at Ai Fiori and Morimoto. At Uma, you can pick from the amazing chef-designed rolls or go rogue and make your own! Essentially everything is GF, you just have to watch out for the sauces! The creamy miso, avocado lime, and tobanjan mayo are GF, but stay away from the wasabi ginger and zesty citrus! My favorite chef creations are the tsumi tuna with green apple and wasabi ginger and the isara salmon with seaweed salad and creamy miso. I created my own tamaki with marinated tofu, carrots, celery, daikon, and a lot of tobanjan mayo! You can pick white or brown rice, and if seaweed isn’t your thing, you can make a rice bowl! In terms of portion, I’d say that one tamaki is a snack, and two are a meal!
Be sure to save room for mochi! I’m obsessed with the chocolate… Definitely one of the reasons I’ll be going back to Uma! It’s casual but gourmet, and I love how much of the menu is GF!
