Memorial Day Weekend with Stoli Gluten Free


It’s Memorial Day weekend, and we all know what that means- summer is here! Well actually, it means a lot more than that. It really means that it is barbecue and fruity cocktail season! So this weekend, as you start planning what beverages you will have at your BBQ or evening rendezvous, I’ve crafted a few patriotic cocktail recipes, using none other than Stoli Gluten Free.

If you didn’t catch my last post about Stoli’s new gluten-free vodka, Stoli introduced Stoli Gluten Free earlier this month. Made from naturally gluten-free ingredients (88% corn and 12% buckwheat), the drink has a unique taste and bold flavor… and most importantly; it is totally safe for us gluten-free folks!

I’ve been recipe testing with Stoli GF for about a month now, and its smooth taste makes it the perfect alcohol component for your (gluten-free) cocktails. This week, in the spirit of red, white, and blue, I made Strawberry and Blueberry Lemonade Vodka pitchers!

Strawberry Lemonade Vodka

What You Will Need:
For the syrup:
1 Cup Strawberries
1 Cup Sugar (I used Organic Cane Sugar)
1 Cup Water

For the Pitcher:
1 Cup Fresh Lemon Juice
1 Cup Stoli Gluten Free
4 Cups Water

What You Will Do:

First make simple syrup. In a saucepan, boil 1 Cup of water. Once boiling, add in 1 Cup Sugar and stir until sugar is dissolved.
Once dissolved, let your syrup cool.
Add 1 Cup Strawberries and bring back to a boil.
Let the strawberries boil for about 10 minutes… you will notice the syrup will turn red and thicken!
After 10 minutes let your strawberry syrup cool.
In a pitcher, combine strawberry syrup, 1 Cup fresh lemon juice, 1 Cup Stoli Gluten Free, and 4-6 Cups of Water.
Stir together, add some ice, and you have yourself a pitcher of Strawberry Lemonade Vodka!

Now repeat, but this time use blueberries!!
And if you want to spice this recipe up a bit, rather then combine all ingredients in a pitcher, combine them in a blender and add a bag of ice. Blend together and this will make frozen lemonades!

Ditch the boring salad and order from the chain that has raised the (salad) bar. Sweetgreen offers a wide variety of signature salads and grain bowls, and the majority are gluten-free. If you are in the mood for a salad, order the Kale Caesar filled with shredded kale, parmesan crisps, and roasted chicken, or the Avocobo packed with bacon, egg, and, of course, avocado. If you are in the mood for a grain bowl you cannot go wrong with the Harvest Bowl which consists of organic wild rice, apples, and sweet potatoes. Just make sure to specify that you want NOBREAD!


Enjoy Life Peanut Butter Chocolate Chip Cookies

It’s National Chocolate Chip Day! So I’m obviously cooking up some delicious, chocolatey treats! When it comes to chocolate, as my loyal followers can attest, there is only one brand I use- Enjoy Life Foods. Enjoy Life Chocolate Chips are my savior. The chocolate comes in Mega Chunks, Mini Chips, and Dark Chocolate Morsels, and like all other Enjoy Life products, they are free of the 8 most common allergens!

Gluten-free and dairy-free chocolate chip cookies are my favorite treats to make, but today I’m spicing it up a bit. So what’s on the menu? Peanut Butter Chocolate Chip Cookies! And the best part? It requires few ingredients and little time to make!

What You Will Need:
1 Cup Peanut Butter
1 Cup Brown Sugar
1 Egg
1 Tbsp Vegetable/Olive Oil
1 Tbsp Vanilla
1 tsp Baking Soda
1 Cup Enjoy Life Chocolate Chips!

What You Will Do:

Preheat oven at 350 degrees.
In a large bowl, mix peanut butter and brown sugar.
Add egg, olive oil, vanilla, and baking soda.
Mix all together until batter is smooth.
Pour in your chocolate chips and ‘fold’ into the batter. (You don’t have to add a full cup if you don’t want to! But I say the more chocolate the better!)
Place parchment paper on a tray.
Scoop batter into cookie form. (Due to the lack of flour, you may have to press/shape the cookies into form).
** Make cookies 1-2 inches in diameter. The smaller the better, otherwise they will break!
Cook for 10 minutes at 350 degrees.
Let cookies cool for 20 minutes! This is super important! Due to the lack of flour, it is important that the cookies cool and firm. If you eat them while they are hot, they will break apart a bit too quick.

Let’s take it one step further! Melt your remaining Enjoy Life Chocolate Chips in a microwavable bowl (60-90 seconds). Stack your cookies and pour your chocolate on top! And that my friends, is how to celebrate National Chocolate Chip day right!


Jamaican Jerk Paella

One of the most memorable dishes I’ve ever eaten is the Kale and Wild Mushroom Paella at Bobby Flay’s Gato in New York City. I literally have dreams about this stuff. The rice is perfectly crispy and the dish has this luscious, buttery flavor to it despite not having any butter in it at all. After about the tenth dream I had about this incredible paella, I decided it was time to make my own.

Obviously there’s no way I can top Bobby Flay, so I wanted to change the flavor profile of this dish a bit. The star proteins include shrimp, chicken, and Applegate’s Peach Jerk Chicken Sausages. These sausages are incredible. They come fully cooked, so they don’t take very long to heat up. Plus, they’re packed with flavor. I’m probably going to have to keep replenishing my stock on a weekly basis. I decided to take somewhat of a Jamaican spin on the traditional paella to match these awesome sausages.

I’m not going to lie, making paella is a total labor of love and a bit bigger of a time commitment than most of my other recipes, but I promise you it’s worth it.

Prep Time: 10 minutes
Cook Time: 75 minutes
Total Time: 85 minutes

Servings: 5

For the jerk seasoning:
1 tablespoon garlic powder
1 1/2 teaspoons cayenne pepper
1 teaspoon dried thyme
1 teaspoon coconut sugar
1 1/2 teaspoons salt
1/2 teaspoon smoked paprika
1/2 teaspoon allspice
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
1/4 teaspoon nutmeg
1 dash cinnamon
For the paella:
2-3 tablespoons jerk seasoning
3 tablespoons olive oil
1/2 yellow bell pepper
1/2 pint cherry tomatoes
1 small yellow onion
1 chicken breast
2-3 Applegate Natural Peach Jerk Chicken Sausages
8-10 shrimp, peeled and deveined
4 cups water
3 teaspoons chicken bouillon
2 cups Lundberg’s Organic Basmati Brown Rice, or other comparable brown rice
salt and pepper, to taste

  1. Add all spices for jerk seasoning to a small bowl.
  2. Stir until fully combined. Set aside.
  3. Dice onion, thinly slice bell pepper, and slice cherry tomatoes in half.
  4. Slice Applegate sausages into half-inch thick slices.
  5. Dice chicken and place in a small bowl. Add jerk seasoning.
  6. Use your hands and mix to incorporate seasoning.
  7. Heat olive oil in a large frying pan. Cast iron is preferred, but not necessary.
  8. Add diced chicken and diced onion.
  9. Cook about two minutes or until chicken is browned and onion is soft.
  10. Add rice and stir until fully combined. When accomplished, all rice will be glossy from the olive oil.
  11. Add about 3 cups to 3 1/2 cups of water, and all chicken bouillon. Stir until combined.
  12. Place shrimp on top of mixture.
  13. Cook over medium-low heat for about one hour. About halfway through, add your chicken sausage, bell pepper, and sliced tomatoes.
  14. Check your paella at the 30-minute mark and the 45-minute mark. Add the extra half cup or 3/4 cup water if your rice is still a little crunchy.
  15. When you have the proper amount of water, don’t be afraid to let the rice on the bottom of your cast iron caramelize a bit.
  16. Serve when rice is soft and all water has been absorbed.
