What I like most about King’s Highway is that you can enjoy your meal outside by the pool in the patio area. The patio has a cool vibe with picnic tables and small tables, and eager pool go-ers running around. For lunch, I highly recommend the tacos! They are served on a gluten-free tortilla and they are all gluten-free except for the fried fish taco, but you can ask for grilled fish!! I ordered the Oasis Salad with grilled shrimp, avocado, and macadamia nuts. Fun fact: I’m addicted to macadamia nuts… they are my secret weapon in smoothies and a lot of my recipes! The salad size is perfect! My friend opted for the Market Greens Salad with grilled salmon, and she was so pleased, as well! We also ordered the French Fries to round out our meal, BUT they are subject to cross contamination in the fryer! Other GF options I want to try include any of the burgers with gluten-free bread, roasted carrots, and cauliflower esquites.
I’m honestly still dreaming of my Oasis Salad, and actually craving it right now! Chef Carlos Salgado, a James Beard finalist and the man behind Taco Maria, has done an amazing job revamping the menus at King’s, at the pool, and room service, and I look forward to what else he has in store for the property!
