It isn’t Christmas without Christmas cookies!! Santa said so!!
Okay, so we all know I love a GF DF chocolate chip cookie. I hate to admit it but I eat GF cookies daily and I am a self-proclaimed cookie connoisseur. I’ve made them all, I’ve bought them all. But there is one cookie I have yet to master, and that’s a true dark chocolate cookie, with chocolate chips. I’ve used cacao powder in the past to darken the cookie, but it’s just not dark enough. Well, while I was playing around in the kitchen the other day, the secret ingredient struck me. And as I threw it all together, it WORKED.
Introducing the only chocolate chip cookie I will be making from here on out. Double chocolate— dark and white— EXTRA GOOEY, and so extraordinarily delicious.
Recipe:
- 1 Cup GF All Purpose Flour
- 1/4 Cup cane Sugar
- 3 T Olive Oil
- 1 tsp Vanilla Extract
- 1 egg
- 3 T Maple Syrup
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- Dash of Salt
- Enjoy Life Foods Chocolate Chips Morsels AND White Chocolate morsels
What You Will Do:
In a large bowl, combine GF All Purpose Flour, Cane Sugar, Baking Soda, Baking Powder, and Salt.
In a smaller bowl, combine egg, oil, vanilla, maple syrup.
Pour wet ingredients into the larger bowl of dry ingredients.
Stir well.
HERE IS THE SECRET INGREDIENT!!
Put dark chocolate morsels in a microwavable bowl and add 1 TBS of olive oil for melting. Microwave to melt the chocolate.
Pour 1/4 Cup of melted chocolate creation ONTO the batter and stir.
Add white chocolate chips Into the batter and mix.
Using a spoon, form ~12 balls of dough onto parchment paper.
Cook for 10 minutes at 350.
Now, I NEVER let things cool, even when I say to. I love GOOEY. But these are EXTRAORDINARILY gooey!! Please let it sit for ~15 minutes so they don’t fall apart. I promise they will still be super Gooey as they cool.
