It’s National Chocolate Chip Day! So I’m obviously cooking up some delicious, chocolatey treats! When it comes to chocolate, as my loyal followers can attest, there is only one brand I use- Enjoy Life Foods. Enjoy Life Chocolate Chips are my savior. The chocolate comes in Mega Chunks, Mini Chips, and Dark Chocolate Morsels, and like all other Enjoy Life products, they are free of the 8 most common allergens!
Gluten-free and dairy-free chocolate chip cookies are my favorite treats to make, but today I’m spicing it up a bit. So what’s on the menu? Peanut Butter Chocolate Chip Cookies! And the best part? It requires few ingredients and little time to make!
What You Will Need:
1 Cup Peanut Butter
1 Cup Brown Sugar
1 Egg
1 Tbsp Vegetable/Olive Oil
1 Tbsp Vanilla
1 tsp Baking Soda
1 Cup Enjoy Life Chocolate Chips!
What You Will Do:
Preheat oven at 350 degrees.
In a large bowl, mix peanut butter and brown sugar.
Add egg, olive oil, vanilla, and baking soda.
Mix all together until batter is smooth.
Pour in your chocolate chips and ‘fold’ into the batter. (You don’t have to add a full cup if you don’t want to! But I say the more chocolate the better!)
Place parchment paper on a tray.
Scoop batter into cookie form. (Due to the lack of flour, you may have to press/shape the cookies into form).
** Make cookies 1-2 inches in diameter. The smaller the better, otherwise they will break!
Cook for 10 minutes at 350 degrees.
Let cookies cool for 20 minutes! This is super important! Due to the lack of flour, it is important that the cookies cool and firm. If you eat them while they are hot, they will break apart a bit too quick.
Let’s take it one step further! Melt your remaining Enjoy Life Chocolate Chips in a microwavable bowl (60-90 seconds). Stack your cookies and pour your chocolate on top! And that my friends, is how to celebrate National Chocolate Chip day right!
