Let’s be real, we all want to cook ourselves a hearty, healthy breakfast, but we either don’t have the time, or we don’t have the ingredients! Well, for those of you rushing out the door but trying to pack in your essential nutrients and protein early in the day, this recipe is for you! I’m pretty famous for my 2-ingredient banana pancakes, and ever since becoming the banana pancake expert, I’ve found my passion for cooking meals with 2-3 ingredients or less! Introducing my two-ingredient sweet potato pancakes! Colorful, tasty, filling, GLUTEN-FREE, and healthy!
What You Will Need:
1 Medium Sweet Potato
2 Eggs
Optional: Cinnamon, Baking Powder, Vanilla
What You Will Do:
With a fork, poke holes in your sweet potato and microwave for ~4 minutes.
Separately, whisk together the two eggs.
Peel skin off sweet potato and combine sweet potato and eggs in a blender.
Once combined, pour batter onto skillet. Keep the pancakes small: ~2″ diameter!
Let the pancakes cook for a minute or so, then flip!
OPTIONAL: Add a dash of vanilla, baking powder, and cinnamon! And of course, top it off with maple syrup and fresh berries.
One sweet potato and two eggs should serve 8 two-inch pancakes. Not only is this meal easy to make, but it is SO filling! These pancakes are healthy and perfect for breakfast or lunch! Enjoy!
