THE most GOOEY Chocolate Cake Balls i’ve ever had!! Gluten-free, dairy-free, and nut-free, too!! I went to a dinner last week and these cake balls were served and I truly can’t remember the last time I have tasted something so delicious. These need to be packaged and sold and made into an empire. I was so obsessed I begged for the recipe and made them the day I got home!! I modified a few things to make them a bit more up my alley and I was sooo happy that my replica turned out just as incredible. HERE’S THE SECRET. you make an inside out cake (make a cake and put the frosting INSIDE) and that’s what make the soft, gooey balls. Refrigerate the balls and dip into melted vegan chocolate of your choice. Store and serve!!
Recipe:
for the cake:
1 cup full fat coconut milk
1 Tbsp cider vinegar
1 cup coconut milk
1 3/4 cups gluten free flour
3/4 cup cacao powder
1 1/3 cups coconut sugar
2 tsp baking soda
1 tsp baking powder
dash of salt
1/2 cup olive oil
2 large eggs
1 tsp vanilla
Bake at 350 for 25 mins. Let cake cool and crumble it up. Add icing.
For the icing:
1/2 cup soft vegan butter
1- 1/4 cup powdered sugar
1 tsp vanilla
1 T coconut milk
Stir into the cake batter and make into balls. This recipe makes like 60+ balls so I recommend doing a half recipe.
