My most viral recipe of the season and believe it or not, it doesn’t involve chocolate! Introducing my gluten-free AND vegan BUFFALO Mac N’ Cheese! This sauce is packed with flavor and the perfect amount of heat, making it the Mac n’ cheese recipe you never knew you needed!
What You Will Need:
1 Box Banza Pasta
1 cup cashews (soaked, drained)
2 tablespoon nutritional yeast
1/2 cup Buffalo Sauce (I used Primal Kitchen)
1 1/2 cups almond milk (add more if needed)
Dash of salt, pepper, garlic powder, onion powder. Probably 1/2 tsp each.
What You Will Do:
For the sauce:
Soak one cup of cashews for a few hours or overnight. Drain and pat dry.
Add all ingredients to a blender, starting with your nut milk.
Blend!
For the pasta:
Boil for about 8-10 minutes, or your desired level of firmness.
Drain!
Top with your sauce… however much you please!
Garnish, and enjoy!
I’m not one for a lot of spice or fire, but this buffalo sauce has the PERFECT amount of heat! It has a tasty kick that feels subtle thanks to the “cheesiness” of the nutritional yeast. I’m OBSESSED with this recipe!
