Funfetti Oatmeal Waffles

This recipe was inspired by favorite recipe website, Minimalist Baker!

What You Will Need:
1 1/4 Cups Coconut Milk
1/4 Cup Melted Coconut Oil
1/4 Cup Maple Syrup
1/2 Cup Gluten-Free Rolled Oats
1 3/4 Cups Gluten-Free All-Purpose Flour
1 1/2 tsp Baking Powder
Pinch of Sea Salt

What You Will Do:
In a bowl, combine Coconut Milk, Coconut Oil, and Maple Syrup. 
In a separate bowl, combine dry ingredients: GF Oats, GF Flour, Baking Powder, and Sea Salt.
Pour wet ingredients into the bowl of dry ingredients, and combine all!
To make your waffles ‘Funfetti’ style, add sprinkles to the waffles as they cook in the waffle maker!
For the ultimate ‘Funfetti’ experience, top your waffles with Vanilla icing! Hey, throw in a birthday candle while you’re at it!

This recipe can also be used to make pancakes!

Banana Pancakes

INTRODUCING THE MOST DELICIOUS, HEALTHY BREAKFAST I HAVE EVER MADE! Would you believe me if I said these amazing pancakes are flourless, gluten-free, and dairy-free, and they have no added sugar? Not only will they take you just 5 minutes or so to make, but they will also leave you full for hours!

What You Need:
1 Ripe Banana
2 Eggs

What You Will Do:
In a small bowl, mash the banana until (relatively) smooth.
In a separate bowl, beat two eggs until they are mixed.
Combine the banana and egg.
On a griddle (heat on medium), pour four small circles of batter. Let it sit, and when the top starts to bubble, flip!
Stack up your pancakes, and top with Maple Syrup, Peanut Butter, Nuts, and more!

Spiced Sweet Potato Truffles

Truffles are an ideal dessert; they’re easy to make, you can make them from just about anything, and they look gorgeous despite minimal effort. I hadn’t made anything similar to a truffle since my cake ball debacle of 2014 (it was a disaster), so I figured it was time to give bite-sized balls another shot.

I searched my pantry for the ingredients I would use for my retribution balls and came across way too many sweet potatoes and a bag of Cinnamon Sweets TERRA Chips. To make truffles you really just need an element of crunch that serves as a binding agent, and an element of creamy that when mixed together can be rolled into balls and dipped in chocolate, so I said YOLO – let’s make truffles out of nearly 100% vegetables and make them so delicious no one would ever know they’re healthy.

This time I succeeded.

Prep Time: 10 minutes
Cook Time: 25 minutes
Cool Time: 30 minutes
Total Time: 65 minutes

Servings: approximately 28 truffles

2 cups mashed sweet potato (yielded from approximately 4 small or 2 large sweet potatoes)
3 tablespoons coconut oil, melted
1/2 teaspoon cinnamon
1 bag Cinnamon Sweets TERRA Chips
2 tablespoons maple syrup
1 tablespoon almond milk
1 bag dark chocolate chips

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Place a paper towel over a cutting board for easy disposal and peel sweet potatoes.
  3. Cut ends off sweet potatoes and then dice.
  4. Place diced sweet potatoes on baking sheet.
  5. Drizzle with melted coconut oil, add cinnamon, and mix to combine.
  6. Place in oven for about 20 minutes, or until sweet potatoes can be easily pierced with a fork.
  7. Remove sweet potatoes from oven and transfer to a cutting board.
  8. Mash sweet potatoes with a fork.
  9. Once all sweet potatoes pieces are mashed, remove to a large bowl.
  10. Add bag of Cinnamon Sweets TERRA Chips to food processor. If you don’t have a food processor, add chips to a gallon size Ziploc bag and crush with a rolling pin or bottom of a cup.
  11. Pulse until finely ground.
  12. Add all crumbs except a couple tablespoons to the mashed sweet potatoes. You will be using the remaining crumbs as garnish.
  13. Add almond milk and maple syrup and mix until fully combined.
  14. Place a new piece of parchment paper on your baking sheet.
  15. Form mixture into small balls and place on baking sheet.
  16. Place in the freezer for about 15 minutes, or until firm.
  17. In a medium-sized microwave safe bowl, add chocolate chips.
  18. Microwave chocolate chips until fully melted, making sure to stir the mixture every 30 seconds.
  19. Once fully melted, remove sweet potato balls from the freezer.
  20. Dip a sweet potato ball into the chocolate mixture, using a fork or spoon to make sure it’s completely covered in chocolate.
  21. Place truffle back on the baking sheet, and garnish with your extra Cinnamon Sweets crumbs.
  22. Repeat until all truffles have been dipped in chocolate.
  23. Place back in the freezer for about 15 minutes, and then move to the refrigerator until ready to eat.

Gio’s Gluten Free Catering

Birthday parties, meetings, events, get-togethers… what do they all have in common? Food. But not just any kind of food – large trays filled with finger-food like chicken fingers and nachos, or Italian favorites like chicken parmesan and pasta. The theme here? Neither are very gluten-friendly, which tends to make otherwise joyous occasions seem not so joyous.

Gio’s Gluten Free, a catering company based out of New Jersey, is the solution to all of us gluten free folks’ prayers. Gio, son of Gio’s founder, Alison Giardina, was diagnosed with Celiac at age 5. After watching Gio be unable to participate in family events and social functions that involved food, and having to watch his every move due to his severe reaction to even the slightest cross contamination, Alison created GIO‘s to bring delicious, healthy gluten-free foods to all consumers in a safe way. Alison, like myself, realized right away the importance of making gluten-free tasty and delicious, and as such, she and her business partner converted traditional foods into gluten-free varieties, and have now also created some stellar originals that are packed full of flavor and nutrients!

Yes, restaurants and catering companies have gluten-free options, like a simple roasted salmon and a tray of grilled vegetables, but Gio’s Gluten Free is 100% GF. Yes, I said 100%… meaning no cross contamination! Furthermore, their expansive menu of Italian and Greek fare was recently certified gluten-free by the GIG organization and Gio’s is the only dedicated caterer in the area! I’m based out of NYC, where gluten-free options are increasingly common, but I can say with certainty that Gio’s will be catering my parties from here on out!

So what are some of my menu favorites? First, the rice balls! I hadn’t had a rice ball since my gluten-eating days. One bite of Gio’s rice balls and I was reminded of what I’ve been missing out on. Filled with rice, cheese, and tomato sauce, these rice balls are literally incredible.  Gio’s uses imported breadcrumbs that look, taste and feel just like the gluten variety! Next, I tried one of Gio’s most popular dishes, the Chicken Mckenna (sautéed chicken with kale, capers in a white wine and tomato broth, topped with cheese). No wonder why this is a crowd favorite! Each bite was outstanding. Meatballs are a difficult dish to recreate in a gluten-free form, and Gio’s meatballs tasted even better than the original! Served on top of gluten-free penne, this dish is even better! Another gluten-free pasta favorite, the pasta puttanesca filled with tomatoes, olive oil, olives, capers and garlic, was amazing, too! The Gio’s ladies source their pasta from a manufacturer in Italy that offers ~20 different cuts of GF pasta, which are all non-GMO, organic, AND gluten-free. For those looking for something a bit healthier, or a nice vegetable dish to compliment the meal, I recommend the brussels sprouts with bits of sun-dried tomato, and the swiss chard sautéed with chickpeas. Both sides are healthy and necessary supplements to your meal!

For those of you who like a classic pasta, La Pasta also makes Gluten-Free Fettuccine, Bucatini, and Linguine! All gluten-free pastas are certified GF and USDA Organic… what could be better?! The pastas are portioned well, and I recommend one package for two people. Lastly, I can’t forget to mention La Pasta’s signature sauces. All sauces are gluten-free, and like the pasta, ingredients used in the sauces are fresh and simple.
