Scrambled, fried, omelette; I love eggs every way! I’ve seen Egg Muffins all over social media, and at Starbucks of course, but it wasn’t until I made them that I totally got the hype. It’s fair to say that this is Ben and I’s new favorite home-cooked date night meal. We love how customizable they are so feel free to fill with any of your favorite ingredients! Our personal go-to is with zucchini, turkey bacon, and hash browns.
Recipe:
8 eggs
1/2 cup alternative milk or water
turkey bacon
hash browns
zucchini
or any fixins you want!
Saute your turkey bacon, hash browns, and zucchini in olive oil so they are cooked! separately, whisk 8 eggs with 1/2 cup “milk” of your choice. Add the sauté mix to your egg mix! Spray a muffin tray VERY well! scoop your batter into the muffin tray- this will make 10-12 little ‘muffins’ depending on how big you want them! we made 10. Cook at 350 for 20 minutes and enjoy!
