If anything can make me a morning person, it’s a bomb breakfast. Oatmeal is always a good go-to since its quick, easy, healthy (and of course gluten-free). This Sweet Coconut Oatmeal recipe is one for the books! I love the hints of cinnamon, and coconut flakes can do no wrong in my book. Whip up your own and get creative with the toppings!
What You Will Need:
14 oz Coconut Milk
1 Cup Rolled Oats
2 T Honey
1/4 Cup Coconut Flakes
1 tsp Coconut Sugar
1 tsp Cinnamon
What You Will Do:
Pour the coconut milk into a saucepan and bring to a gentle boil over medium heat.
Once boiling, mix in the cup of oats and honey.
Stir together and lower the heat. Let it simmer for about 15 minutes or until the milk has been fully absorbed.
Scoop the oatmeal into a bowl and add your toppings! We went with a pinch of coconut sugar, a pinch of cinnamon, and a handful of coconut flakes.
