Can you believe I haven’t come out with a new PANCAKE recipe since 2018?! I’M SORRY! Brownies and cookie dough bites got the best of me and my attention, and I’ve completely neglected my favorite mealtime: breakfast! Well ’tis the season of pumpkin and pumpkin pancakes are flooding my feed, so it’s only fair I come out with my very own, but make it better-for-you and NOBREAD-approved! These pancakes are insane!! Oh, and they are gluten-free, dairy-free, refined sugar free, and nut-free!
What You Will Need:
1/3 c + 2 tbsp Oat Flour
1/3 c pumpkin puree
3 tbsp coconut sugar
1/2 tsp baking soda
1/2 tsp vanilla
1/4 tsp cinnamon
1/4 tsp pumpkin spice
1 egg
What You Will Do:
In a bowl, whisk your egg. Add in oat flour, pumpkin puree, coconut sugar, baking soda, vanilla, cinnamon, and pumpkin spice.
Whisk to combine all ingredients.
Heat a skillet with olive oil spray or vegan butter.
Pour 4 circles of batter onto the skillet. Once firm on the bottom, flip!
Top with maple syrup, pecans, and vegan chocolate chips. Enjoy!
