Raspberry Almond Butter Smoothie with Vital Proteins Collagen

If you have followed me for a while… or even for just a few weeks… you’ll know that I. LOVE. SMOOTHIES. All of my smoothies are different, too! I use a creative mix of fats, proteins, and veggies to make my delicious masterpieces. Well there is ONE thing my smoothies have in common… I use Vital Proteins Collagen as my protein source! The vanilla coconut is my go-to when I want a little vanilla, but when I want classic I love using the marine collagen! Check out the making of this bad boy on my Instagram! Full recipe below…

Vital Proteins

What You Will Need:
1-1.5 Cup Unsweetened Nut Milk
1 Serving Vital Proteins Marine Collagen
2T Almond Butter
1 T Chia Seeds
Handful of Spinach
1/4 Cup Raspberries

What You Will Do:
Add all ingredients to a nutribullet or Vitamix, starting with your liquid base. Blend on high until thoroughly mixed. (Add ice if you want a colder, thicker smoother). Serve and enjoy!

Roasted Thanksgiving Vegetables

Yes Thanksgiving is all about the heavy (#glutenfree) stuffing, pies, and bread… but it is also the one holiday that features all of my favorite VEGETABLES!! Brussels sprouts, carrots, and butternut squash, OH MY! Today I am making my go-to Thanksgiving veggies and roasting them to utter Thanksgiving perfection.

What You Will Need:

5 Organic Long Carrots
½ lb brussels sprouts
1 lb cubed butternut squash
1/4 Cup coconut oil
2 Tbsp maple syrup
¼ Cup pecans
¼ cup dried cranberries
Salt, pepper, CINNAMON

What You Will Do:

Preheat oven to 400 F.

Prepare vegetables as follows: Carrots – peel, then cut in half lengthwise. Cut into shorter lengths if you would like! Brussels sprouts – trim the stem end and remove the outermost leaves and cut in half. Butternut Squash- buy cubes, and cut into smaller cubes (better for cooking).

Add veggies to a baking sheet lined with parchment paper. Top with coconut oil and ONE T maple syrup. Cook at 400 for 20 minutes and flip. Add your second tablespoon of maple syrup, pecans, cranberries, cinnamon, salt and pepper. Cook for 10 more mins. TASTE. Add more maple, cinnamon, etc IF YOU WOULD LIKE.  Cook for 5 more mins.

Serve!

MatchaCado Banana Smoothie!

New smoothie alert!! Last year when I did the keto diet, I always struggled with the concept of having a bulletproof matcha for breakfast (as many mathca-drinkers do on the diet).

When it comes to breakfast, I need something a bit more filling (aka my smoothie)! But we all know how much I love my matcha. So I decided there must be a way to incorporate the two!! Introducing my MatchaCado Banana Smoothie!

What You Will Need:
1.5 Cup Unsweetened Almond or Coconut Milk
.5-1T Chia Seeds
1/2 Avocado
1 Scoop Vital Proteins Matcha Collagen
1C Spinach
1/2 Frozen Banana

What You Will Do:
Add all ingredients to a Vitamin or NutriBullet, starting with the nut milk.
Blend on high until fully incorporated.
Pour into a bowl, and top with toppings of your choice. I topped mine with the other half of  my banana and coconut flakes!

Halloween with YumEarth

Growing up, I LIVED for Halloween. In fact, I often think about how sad I would have been every Halloween if I knew about all of my current food intolerances; I would have had to give away the majority of my candy!!

I bought the Halloween Variety Pack for this year’s Halloween (assortment of pops, gummy bats, and gummy jackolantern snack packs), and while I was at it, I picked up a few bags for my friends and a couple of extra to keep in my cabinets for after the holiday. The only thing that makes me happier than this limited edition Halloween line existing is the fact that at my local Whole Foods, the YumEarth Halloween display is smack in the middle of the store (right by the registers) and right in the midst of all of the commotion! No wonder why the Halloween line is selling out everywhere so quickly!! Halloween is meant to be enjoyed by everyone, even the food-intolerant. YumEarth Organic Candy

I want candy! … Said Aaron Carter… and Nicole Cogan. We all know I have a HUGE sweet tooth, but I direct my sweet tooth towards (dairy-free) chocolate and delicious gluten-free pastries. Well interestingly enough, growing up I hated chocolate and pastries! I was all about candy. Aloha

I’ve always said if I ever go to Hawaii there is a good chance I won’t come back. Why? Hawaii is the land of happy! Floral arrangements, delicious healthy eats, blue ocean everywhere you turn… what could be better?! Well I should have said the same about Aloha. Banana Bread

Whether it’s because I’m making my banana pancakes or simply using a banana as a topping or garnish in one of my dishes, bananas are a necessary component in many of my NOBREAD recipes. This week, I had visitors in town, and like any good hostess, I stocked my home with NOBREAD essentials. Unfortunately, I overbought most grocery items, and much of my food went bad! I was slightly disappointed; that was until I realized my bananas were going bad too, and the only thing that makes me happier than perfectly ripe bananas are bananas that are going bad! Why? Well, these bananas are GOLD in the world of banana-bread making, and I’ve had a new recipe right up my sleeve that I’ve been dying to try.

What You Will Need:
2 Cups All-Purpose GLUTEN FREE Flour
¾ Cup Brown Sugar
3 RIPE Bananas
2 Eggs
¼ tsp Salt
1 tsp Baking Soda
½ Cup Dairy Free Butter
Optional: GF/DF choc chips!

What You Will Do:
Preheat oven to 350 degrees.
In a large bowl, combine gluten-free flour, baking soda, and salt.
In a separate bowl, melt butter and combine with brown sugar.

Add butter/sugar to large bowl and mix.
In two separate bowls, mash 3 bananas and whisk two eggs.
Combine bananas and eggs in large flour bowl and mix until smooth.

If you want to make chocolate chip banana bread, now’s the time to add your GF/DF chocolate chips!
Pour batter into a 9.5 in x 5.5 in bread pan.

Place in the oven for ~30 minutes, or until the top of your bread is nice and brown. If you stick a toothpick or knife into the bread, it should come out nice and clean! Otherwise, let it cook a bit longer!
Let bread cool for ~15 minutes.
Slice and serve!

Enjoy Life Baking Chocolate

Enjoy Life products are free of the 8 most common allergens (wheat, dairy, peanuts, treenuts, fish, soy, eggs, and shellfish), and when I went gluten-free (and several other food groups-free) 7 years ago, Enjoy Life products were my savior. The chocolate comes in Mega Chunks, Mini Chips, and Dark Chocolate Morsels. Although they are intended for baking, I often use them for snacking! Recently, I had the opportunity to try the Enjoy Life Brownie Mix, and I figured I’d make my own “food-porn” by melting Enjoy Life Baking Morsels and topping my brownies with the chocolate-y goodness!

What You’ll Need:

1 Box Enjoy Life Brownie Baking Mix
1 Cup Water (the recipe calls for 3/4 cup, but I went with 1 cup)
2 Tbsp Cooking Oil
1 Bag Enjoy Life Baking Chocolate

What You’ll Do: 

Preheat Oven to 350
Empty Baking Mix into a large bowl.
Add Water and oil
Stir until smooth, and pour into a 9×9 or 8×8 baking tray.
Cook for 35-40 minutes, remove from oven, and let cool for 10 minutes

Pour Baking Chocolate into a microwavable bowl, and cook for 1 minute.
Stir it up to melt the morsels. If need be, heat for 30 more seconds until the chocolate is in liquid form!

Cut Brownies into 3×3 squares, and top with chocolate frosting.

Take a bite, and ENJOY!!

Banana Pancakes

INTRODUCING THE MOST DELICIOUS, HEALTHY BREAKFAST I HAVE EVER MADE! Would you believe me if I said these amazing pancakes are flourless, gluten-free, and dairy-free, and they have no added sugar? Not only will they take you just 5 minutes or so to make, but they will also leave you full for hours!

What You Need:
1 Ripe Banana
2 Eggs

What You Will Do:
In a small bowl, mash the banana until (relatively) smooth.
In a separate bowl, beat two eggs until they are mixed.
Combine the banana and egg.
On a griddle (heat on medium), pour four small circles of batter. Let it sit, and when the top starts to bubble, flip!
Stack up your pancakes, and top with Maple Syrup, Peanut Butter, Nuts, and more!

Gluten-Free TOAST

Avocado toast was without a doubt the biggest food trend of 2015. And as the breakfast menu item skyrocketed in popularity, and became dare I say, an epidemic, so did gluten-free avocado toast. I mean, us gluten-free folk deserve to indulge, too, right?!

Well, why stop with avocado toast. Although we are ‘NOBREAD,’ we love great gluten-free bread, and love topping our GF goodness with different spreads and toppings!

What You Will Need:
One loaf of gluten-free bread (in this instance, we used Udi’s, but any GF bread works!)
Spreads of your choosing! (We used Justins Chocolate Hazelnut Butter and Vanilla Almond Butter, as well as Pillsbury Vanilla icing)
Fruit of your choosing, too!

What You Will Do:
Toast your gluten-free bread until lightly brown.
Spread icing/nut butters on toast, and top with fruit

That’s it. You’re done! Just like that, you have a BEAUTIFUL, filling breakfast or snack!

Anyone who knows me knows that Enjoy Life Foods is my favorite brand of gluten free snacks. I eat the cereals for breakfast, the cookies with every meal (crunchy chocolate chip is my go-to), and the chocolate bars are my staple go-to post-dinner dessert. Recently, I discovered Enjoy Life Plentil chips! I’m always experimenting with different gluten free grains and legumes to diversify my diet and add nutrition. I’m also a salt-attic, and LOVE a good potato chip. So when I discoverd Plentils, essentially a lentil potato chip, I couldn’t have been more thrilled.

To start, Plentil chips are low in calorie and high in nutrition. As much as I love french fries, I realize the importance of limiting my fried-food intake, and Plentils are the perfect, crisp replacement to accompany my meals.
