BUSH’S® Black Bean Fiesta™

Summer recipes are my absolute favorite. Grilled seafood and vegetables, avocado on everything, and that good ‘ol margarita that makes the meal complete. Well, there is one summer dish that is often overlooked, and today I’m bringing this delicious side recipe to center stage. BEANS! BUSH’S® Black Bean Fiesta™ to be exact.

BUSH’S® Black Beans are naturally gluten-free, only 120 calories per half cup serving, and have 7 grams of protein per serving! Oh, and the beans have just the right amount of spice!

Today I am making my classic summer lunch dish, and packing on a little bit of heat thanks to BUSH’s® Beans.

What You Will Need:
3-4 oz Wild Shrimp
1 Can BUSH’S® Black Bean Fiesta™
½ Avocado
Handful of Tortilla Chips
1/2T Avocado oil

What You Will Do:

Remove the BUSH’S® Black Bean Fiesta™ from the can and heat for 1-2 minutes in a microwave safe dish.
While your beans are baking, sauté 3-4oz defrosted or fresh Wild Shrimp in 1/2T avocado oil, and sprinkle with salt and pepper.
Cook your shrimp for about 1-2 minutes on each side.
Plate your shrimp, along with the tortilla chips and mashed avocado.
Scoop about 1/3 can of BUSH’S® Black Bean Fiesta™ onto the plate, too!

Serve and enjoy!

Salmon Avocado “Un”Roll

SUSHI. I FRICKEN LOVE IT. But whenever I order sushi I am met with rolled eyes and a TON of questions.

“Wait, rice is gluten-free?”
“Doesn’t soy sauce have gluten??”
“You eat carbs??”

Yes, yes, and yes.
Rice, in its purest form, is gluten-free.
Soy Sauce has gluten, but tamari sauce is gluten-free and tastes exactly the same (and many restaurants carry it).
Yes, I LOVE my carbs. I also ALWAYS opt for white rice over brown, but that’s a story for another time.

Sushi is the one food category I always order when I am out, but never make on my own. Partially because I don’t have a sushi roller, and partially because even if I had one, making sushi isn’t worth the time and mess.

This Salmon Avocado “Un”roll is a take of my favorite sushi roll and will give you all of the sushi feels… without the mess!

What You Will Need:
1 Sushi Sheet (I use seasnax)
1/2 Cup white rice
3″ cucumber- peeled and cut
1/3 Avocado
3-4oz Wild Salmon
optional: gluten-free tamari soy sauce

What You Will Do:
Steam or boil your white rice and place it on top of the sushi sheet.
Layer on your sliced cucumber and avocado.
Sauté wild salmon and add it to the ‘roll.’
If you crave a bit of salt, add tamari!
Take a bite and enjoy!!

The ‘Refreshing’ Smoothie with Vital Proteins

Last week I had the opportunity to go to Cabo San Lucas, Mexico, for my first time with the Vital Proteins team! A trip to Mexico and a healthy retreat sounded incongruous, but thanks to Vital Proteins collagen tubs everywhere, I made it work just fine! Mainly because I started each day with the smoothie recipe below. Enjoy!

What You Will Need:

1.5C Unsweetened Almond Milk
Handful of Spinach and Kale
Handful of Raspberries
3 cucumber slices
2 scoops @vitalproteins Marine Collagen
1/2 Avocado
Squeeze of Lemon

What You Will Do:

Add all ingredients to a blender, starting with your nut milk.
Blend on high until fully incorporated. Add a few ice cubes, too, for a colder smoothie!
Serve!

Cacao Avocado Pudding

Growing up I had a pudding cup in my lunch bag every day. Which explains why I am a total chocaholic now! Since going gluten and dairy-free, I haven’t had pudding! Well, it dawned on me. I use avocados in my smoothies to make my smoothies extra creamy, so why not use them with a little cacao to make my dream pudding bowl. Four ingredients later, my dream pudding bowl had been made!
What You Will Need:
2 Avocados
1/2 Cup Cacao Powder
1/4C Maple Syrup
1/2C + 2T Unsweetened Almond Milk
Pinch of Salt
1tsp Vanilla
What You Will Do:
Slice two avocados and add to a blender or Vitamix.
Add Cacao Powder, Maple Syrup, Almond Milk, Salt, and Vanilla.

Blend on high, pausing here and there to scrape down the sides of the blender if need be.
Pour into a bowl, and add your toppings! I added Banana Slices and Cacao Nibs.
Enjoy!
 
I like my pudding as is, and use toppings as a way of adding sweetness to the pudding. But if you like things EXTRA sweet like my assistant, add a little more maple syrup on top and stir it in!

The NOBREAD… aka My Vanilla Avocado Smoothie!

What You Will Need:
1.5 C Unsweetened Vanilla Nut Milk
1 Scoop Vanilla Coconut Vital Proteins Collagen Peptides
Handful of Spinach
Handful of Blueberries
1T Chia Seeds
1/2 Avocado

What You Will Do:
Add all ingredients to a Vitamix or NutriBullet starting with your nut milk.
Blend on High for 30-45 seconds, or until the smoothie is totally blended.
Pour into a bowl and top with cacao nibs, coconut shavings, and a little almond butter or with fruit!
Serve and ENJOY!

Vegan Smoothies Made with Califia Farms

I asked a few friends this weekend, “When you think of my brand, what do you think of?” The answer was unanimous. SMOOTHIES! I start every morning with a smoothie, and often have them for dinner or lunch, too! And no it doesn’t get boring! With so many inclusions available and varieties of proteins, fats, greens etc, no two smoothies are the same. Well, one thing is the same. Each smoothie incorporates one of Califia Farm’s nut milks!

The plant-based brand is not only vegan but GMO-free, and all ingredients are sustainably sourced. I’m kind of obsessed with the Toasted Coconut AlmondMilk, and other favorites include the Chocolate Coconut AlmondMilk and Vanilla AlmondMilk. 1T Coconut Butter

1C Frozen Cauliflower
TOPPINGS: Blueberries, Straberries, Raspberries, Blackberries

CHOCOLATE PEANUT BUTTER:
1.5 Cups Califia Farms Chocolate Coconut AlmondMilk
1 Scoop Chocolate Protein Powder
1/2 Banana
1T Peanut Butter
1T Chia Seeds
1/2 Frozen Zucchini
TOPPINGS: Cacao Nibs, Coconut Shavings, granola

MATCHACADO BANANA:
2 Cups Califia Farms Toasted Coconut AlmondMilk
2 tsp Matcha
1 Scoop Vegan Vanilla Protein Powder
1/2 Avocado
½ Frozen Banana
1T Chia Seeds
1C Spinach
Toppings: Avocado, Coconut Butter, Banana

MatchaCado Banana Smoothie!

New smoothie alert!! Last year when I did the keto diet, I always struggled with the concept of having a bulletproof matcha for breakfast (as many mathca-drinkers do on the diet).

When it comes to breakfast, I need something a bit more filling (aka my smoothie)! But we all know how much I love my matcha. So I decided there must be a way to incorporate the two!! Introducing my MatchaCado Banana Smoothie!

What You Will Need:
1.5 Cup Unsweetened Almond or Coconut Milk
.5-1T Chia Seeds
1/2 Avocado
1 Scoop Vital Proteins Matcha Collagen
1C Spinach
1/2 Frozen Banana

What You Will Do:
Add all ingredients to a Vitamin or NutriBullet, starting with the nut milk.
Blend on high until fully incorporated.
Pour into a bowl, and top with toppings of your choice. I topped mine with the other half of  my banana and coconut flakes!

Blueberry Cauliflower Smoothie

What makes a good smoothie? Well this answer will be different for everyone! For me, a good smoothie is a smoothie that is creamy AF. It makes me feel fuller, and when you’re having a liquid as a meal, it can be tough to feel full after! My new Blueberry Cauliflower Smoothie, which is a take of my Vanilla Avocado Smoothie, is my creamiest smoothie yet thanks to a special ingredient: cauliflower!

What You Will Need:
1.5 Cup Unsweetened Nut Milk
1/2 Avocado
1 Scoop Vanilla or Chocolate Protein Powder (the top two photos here use chocolate protein, the last photo uses vanilla)
1/4 Cup Blueberries
1T Chia or Flax Seeds
1/2-1Cup steamed then frozen Cauliflower (the more cauliflower florets the creamier)

What You Will Do:
Add all ingredients to a blender starting with the nut milk and ending with the frozen cauliflower.
Blend in a Vitamin or NutriBullet on high for 40-50 seconds.
Finish with toppings of your choice and serve!

Adding frozen cauliflower FLORETS, not cauliflower RICE, to this smoothie is the key to making it creamy AF. Next up I will be trying frozen zucchini… stay tuned!

Chocolate Avocado Coconut Cups

Peanut Butter Cups, Almond Butter Cups, Coconut Butter Cups… why not Avocado Cups!! Last year I made Avocado Marshmallow Cups and they were super tasty! But the filling was more liquidy than your typical nut butter cup. And although I still HIGHLY recommend making them, I decided to give this recipe another go, except this time I opted to use coconut butter in place of marshmallow to give me the nut butter cup consistency I was craving. The result? HUGE SUCCESS. Top 5 recipe of the year right here!!!

What You Will Need:
1/2 Cup Mashed Avocado (1 medium avocado)
1/3 Cup Coconut Butter
1/4 Maple Syrup (or alternative paleo sugar)
Pinch of Salt
Half Bag of GF/DF chocolate Chips
1T Almond Flour

What You Will Do:
In a small bowl, add mashed avocado, coconut butter, maple syrup, salt, and almond flour.
Mix until combined and smooth.
Line a muffin tray with Cups, and add 1T of batter to each cup.

Melt chocolate chips in the microwave (add coconut oil if need be)
Top each avocado cup with a thin layer of chocolate.


Chill in the refrigerator or freezer for at least 30 minutes, and serve!


PRO TIP: FREEZE your cups!! They LITERALLY taste like ice cream when you do!!!

My Go-To Lunch!

If you follow me on Instagram stories, you know that I have a signature lunch: Cauliflower rice with mashed avocado and a sunny side up egg! It’s so funny- it is the simplest lunch and takes just minutes to make, but people go wild for it!

“Do you make the cauliflower rice yourself??”
“What do you cook the cauliflower rice in?”
“What other proteins do you recommend adding?”

Well everyone, here is the recipe for my famous lunch!

I buy Trader Joe’s pre-cut cauliflower rice, and cook a half bag of it in 1T Avocado oil. Cook on a skillet until the rice starts to brown. Pour it in a bowl and add a half avocado and an egg! (or shrimp/smoked salmon). Top with pink himalayan sea salt and wah-lah!

If you are vegan, you can add tofu or more veggies instead of egg/seafood/meat!

Grapefruit Avocado Salad with Grapefruit Stoli Crushed!

It’s going to be a hot one in Malibu today… and a fun one! And I’ve been tasked with bringing healthy snacks and cocktails! Introducing my go-to summer salad. It’s light and refreshing and pairs perfectly with cocktails, especially the new Stoli Crushed in Grapefruit!!

What You Will Need:
For the Salad:
2 Avocados
2 Grapefruits
Lettuce of your choosing

For the Citrus Vinaigrette:
1T Minced Shallot
1 1/2 tsp chopped fresh oregano
1 1/2 teaspoons lime zest
3 lime juice
1/2 cup light olive oil
1/4 teaspoon kosher salt

What You Will Do:
Peel and segment your grapefruits.
*To do this, first cut your grapefruit in half and then slice off the outer shell. Peel off what remains of the shell after slicing! Then segment the grapefruit along its natural splits.
Cut your avocados in half, remove the shells and pit, and slice the avocado in similar shapes as the grapefruit.
Place the grapefruit and avocado on top of a bed of lettuce, rotating the grapefruit and avocado.
Drizzle your citrus vinaigrette over the salad!
Serve alongside a Grapefruit Stoli Crushed on Ice or mixed with club soda.

Just like that you have the most refreshing summer lunch or appetizer. This dish and cocktail combo is SUCH a hit at summer BBQ’s…. I’m can’t wait to bring it to mine today!!
