I’m always making waffles and pancakes, but I’ll admit… I often use gluten-free pancake or waffle mix for the sake of time! Well, this week I decided to get creative and make my own from scratch. The recipe is simple, and only takes 15 minutes or so to prepare! Sometimes gluten-free waffles can be SUPER dense, but I’m happy to announce this recipe makes waffles that are super light and airy, so you can indulge in a few without feeling too full. Or guilty… Oh, and they are dairy-free too!
What You Will Need:
2 Eggs
2 Cups All-Purpose GLUTEN-FREE Flour
1 3/4 Cup Coconut Milk
1/2 Cup Vegetable Oil
1 Tablespoon White Sugar
4 Teaspoons Baking Powder
1/4 Tsp Salt
1/2 Tsp Vanilla Extract
However many blueberries you want!
What You Will Do:
In a large bowl, combine GF Flour, White Sugar, Baking Powder, and Salt.
Separately, combine Coconut Milk, Vegetable Oil, Vanilla Extract.
Whisk eggs together and add to wet ingredients.
Add your wet ingredients to your dry ingredients and stir until smooth.
Add your blueberries!
Pour batter into waffle maker, and let the maker do it’s magic!
Stack your waffles, add your toppings, and serve!
