Roasted Carrots


Roasted carrots are my guilty pleasure. But given that carrots are high in beta carotene and a good source of antioxidant agents, I guess it’s a good guilty pleasure to have?! Especially when you dress your carrots in sweet coconut oil… they’re basically candy! Well it’s time I share my go-to carrot recipe with the world… especially because they are so easy and simple to make!

What You Will Need:


One package of Carrots. (If unpeeled, please peel!)
1-2 T Coconut Oil
Salt + Pepper (Amount is of your choosing)

What You Will Do:


Preheat oven to 425 degrees F
Slice carrots in half or thirds with an extra sharp knife.
Depending on your portion size, coat sliced carrots with 1-2T of Coconut Oil. *For this serving size we used 2T.
Sprinkle with salt and pepper.


Place in the oven and cook for 20 minutes. Flip, and cook for another 20 minutes.
Pair with cooked quinoa and an avocado, and serve!
