YES, you read correctly. The McCarthy Salad from The Beverly Hills Hotel is $45! Now everyone knows that you aren’t paying $45 for the contents of the dish, you are paying for the experience, and of course, the Beverly Hills zip code. And yes, even with that, $45 still seems kinda of outrageous!! Anyone else GUILTY of ordering this salad far too often?!
Last time I was at BHH, I was staring into my beautiful McCarthy Salad bowl and I thought to myself, “Hm. I could totally recreate this (and I bet it’s only $10).” So off to Whole Foods I went, BUT not before I reaching out to my friend, Carissa Stanton (@broccyourbody). Carissa is not only an incredible recipe developer, but she’s been known to recreate some of LA’s hottest dishes (La Scala salad, Jon & Vinny’s pasta)! Well everyone, here she is! Our (inexpensive yet equally delicious and healthy take of the) $45 McCarthy Salad!

What You Will Need:
1 cup romaine, chopped
1 cup iceberg, chopped
1/2 cup grilled chicken, diced
1/4 cup tomato, cored and diced
1/2 cup roasted red beets, diced (totally get them pre-roasted at TJ’s, Whole Foods etc)
1/2 cup hard boiled eggs, diced (I scrambled 1 egg)
1/4 cup bacon, diced
1/4 cup sharp cheddar cheese, diced * I use vegan to be dairy-free, or you can leave out if you are paleo!
1/2 avocado
Kosher salt & pepper to serve
Dressing:
1 tbsp olive oil
1 tbsp balsamic vinegar
1 clove of garlic, roasted
1 tsp coconut sugar or maple syrup
1/4 tsp Dijon mustard
Kosher salt & pepper
What You Will Do:
To roast the garlic for the dressing, peel the cloves and drizzle with olive oil in tin foil. Bake at 350 for 40 minutes until soft.
Assemble your salad as shown. Whisk or blend together dressing ingredients and pour over your salad. Top with kosher salt and pepper. Enjoy!!! Makes 1 serving.
