Blueberry Cauliflower Smoothie

What makes a good smoothie? Well this answer will be different for everyone! For me, a good smoothie is a smoothie that is creamy AF. It makes me feel fuller, and when you’re having a liquid as a meal, it can be tough to feel full after! My new Blueberry Cauliflower Smoothie, which is a take of my Vanilla Avocado Smoothie, is my creamiest smoothie yet thanks to a special ingredient: cauliflower!

What You Will Need:
1.5 Cup Unsweetened Nut Milk
1/2 Avocado
1 Scoop Vanilla or Chocolate Protein Powder (the top two photos here use chocolate protein, the last photo uses vanilla)
1/4 Cup Blueberries
1T Chia or Flax Seeds
1/2-1Cup Frozen Cauliflower (the more cauliflower florets the creamier)

What You Will Do:
Add all ingredients to a blender starting with the nut milk and ending with the frozen cauliflower.
Blend in a Vitamin or NutriBullet on high for 40-50 seconds.
Finish with toppings of your choice and serve!

Adding frozen cauliflower FLORETS, not cauliflower RICE, to this smoothie is the key to making it creamy AF. Next up I will be trying frozen zucchini… stay tuned!

Sweet Potato Smoothie Bowl

It’s winter. Your skin is starting to dry and let’s be real, you’re flat out COLD. We may not be able to do anything about the temperature, but we CAN do something about our food and our bodies. Introducing my Sweet Potato Smoothie Bowl, the ultimate, hearty winter smoothie bowl that will keep your skin feeling fresh and moist, and your stomach feeling full.

What You Will Need:
1.5 Cup Unsweetened Original Almond Milk
1 Medium Sweet Potato (~3/4 Cup Mashed) (High in Vit A and C with collagen boosting properties to delete the bags under your eyes and keep your skin feeling healthy)
1-2T Almond Butter (High in fiber and good fats to keep your skin nice and moist)
1T Chia Seeds (same as above!)
Optional: 1 Scoop Vanilla Protein Powder
To Garnish: Cinnamon (anti-inflammatory and metabolism booster), Pecans, Cacao Nibs (anti-oxidizing properties)

What You Will Do:
Add all ingredients to a blender/vitamix etc, starting with your nut milk.
Blend on high until fully incorporated.

Garnish with cinnamon, cacao nibs, and pecans, and serve!


Butternut Squash Soup

Recently my doctor told me I need to incorporate more vegetables into my diet. I love vegetables, but simply roasting, baking, and sautéing can be a bit boring. That’s why I’ve started turning my vegetables into cheese sauces and soups! This Butternut Squash Soup was done in collaboration with my mom! <3

What You Will Need:
20 oz pre-cut butternut squash
½ diced medium onion
½ diced organic apple
3 tbsp olive oil or avocado oil
24 oz organic low sodium chicken broth (or veggie broth for vegan)
Salt and Pepper

What You Will Do:

  • Roast cut pieces of butternut squash in 1 tbsp olive oil on a cookie sheet in a 350-degree oven. Season the squash before roasting with salt and pepper. Cook for approx 30-40 minutes or until the squash has some brown edges and is tender when pierced with a fork.
  • In a saucepan add 2 tbsp olive oil, apple, onion and season with salt and pepper, sauté till tender (approx 5-10 minutes).
  • Transfer 1/3 of squash, apple/onion mixture and chicken broth to a blender and puree and then transfer to a bowl.
  • Do this step 2 more time for the remaining ingredients. I transferred the blended soup to a nutribullet to obtain a super smooth consistency, if you have a vitamix that works great too. Heat the soup and your ready to serve.
  • Suggested additions: nutmeg, red pepper flakes, cinnamon

Halloween with YumEarth

Growing up, I LIVED for Halloween. In fact, I often think about how sad I would have been every Halloween if I knew about all of my current food intolerances; I would have had to give away the majority of my candy!!

Thankfully, companies like YumEarth have recognized that candy is the first to go for those with food allergies and intolerances, and have created a product that solves this problem. I’m pretty much obsessed with the YumEarth sour twists, and it’s been my intention since discovering the brand to serve all of their candies at Halloween, so you can imagine my excitement when I saw that for a limited time, Gummy jack-o-lanterns and bats and Organic Candy Corn are back on sale at YumEarth for the holiday! Candy Corn at Halloween is like Candy Canes at Christmas and Chocolate on Valentine’s Day… A.K.A. a total must have. To see an allergy-friendly version has literally made my year. Oh and the taste? DELICIOUS! Seriously even better than I remember.

I bought the Halloween Variety Pack for this year’s Halloween (assortment of pops, gummy bats, and gummy jackolantern snack packs), and while I was at it, I picked up a few bags for my friends and a couple of extra to keep in my cabinets for after the holiday. The only thing that makes me happier than this limited edition Halloween line existing is the fact that at my local Whole Foods, the YumEarth Halloween display is smack in the middle of the store (right by the registers) and right in the midst of all of the commotion! No wonder why the Halloween line is selling out everywhere so quickly!! Halloween is meant to be enjoyed by everyone, even the food-intolerant. Rosemary Gimlet with Stoli Gluten Free

What You Will Need:

For the Rosemary Syrup

1 Cup Water
1 Cup Sugar
1/4 Cup chopped fresh rosemary leaves

For the Rosemary Gimlet

4 oz Stoli Gluten Free
1.5 ounce fresh lime juice
1.5 ounce rosemary syrup made above

What You Will Do:

For the syrup:
Heat the water and sugar, stirring occasionally, until the mixture is hot and sugar is dissolved. Add chopped rosemary leaves and continue to stir.
Remove from heat and let cool completely.
Once cool, strain the rosemary syrup and add to your cocktail!
For the cocktail: 
Fill a cocktail shaker with ice, and add your rosemary syrup, lime juice, and Stoli Gluten Free.
Shake well, and serve in a chilled glass or over ice.
Garnish with a sprig of rosemary!
This recipe pairs AMAZINGLY well with my Garlic and Coconut Crisp Hasselback Potatoes!

Coconut Rosemary Hasselback Potatoes

I. LOVE. POTATOES. French Fries, Roasted, Scalloped, Sweet Potato- I love them all! Well I think I took my potato obsession to a new level (or a new high…) this week when I mastered the Hasselback potato! I’ve long wanted to make this recipe, but I’ve been waiting for a special occasion! I mean, I could make one for myself when I’m dining solo, but it’s way more fun and worth it to make multiple Hasselback potatoes and share with friends. Not only is the dish super unique, but it will for sure have guests at a dinner party going wild and begging for more!

What You Will Need:
6 Medium Potatoes
Liquid Coconut Oil
Rosemary Sprigs
Salt & Pepper

What You Will Do:
Preheat an oven to 425 F.
Wash and dry your potatoes, and place them on a cutting board.
With a large knife, slice slits into the potato, stopping just before you hit the bottom of the potato.
Remove Rosemary leaves from the sprig, and place a rosemary leaf in every other slit.
Place parchment paper on a tray, and spray the sheet with coconut oil spray (or grease with coconut oil).
Place potatoes on the parchment paper, and glaze each potato with liquid coconut oil.
Top with salt and pepper.

Place potatoes in the oven for 40 minutes.
Remove from oven, and now that the slits have separated, drizzle coconut oil over each potato so that the oil falls between the slits.
Place back in the oven for 20 minutes or until the nice, crisp golden brown texture you want is reached.
Remove, let cool a bit, and serve!

All were so delicious!

What I love most about the service is the ability to cook the food yourself. This way, you can cook your meal exactly as the recipe card tells you, or use your own creativity to customize the ingredients at hand! I highly recommend Green Chef, and can’t wait to continue enjoying their (gluten-free) meals!

No Bake Chocolate Almond Bars

I first started making no-bake recipes because whenever I cook, I tend to eat half the batter before baking! And when a recipe has egg in it this isn’t the smartest idea. Does anyone else agree that the batter is the best part of a recipe?? With this No Bake Chocolate Almond Bar recipe you can indulge in the batter, guilt-free!

What You Will Need:
For the Almond Bake:
1 Cup Almond Butter (or other nut butter)
1/2 Cup Coconut Flour
1/4 Cup Coconut Sugar (or alternative natural sweetener)

For the Chocolate Spread:
1 Cup Vegan Chocolate Chips for melting
1/2 Cup Almond Butter (or other nut butter)

What You Will Do:
In a bowl, combine almond butter, coconut sugar, and coconut flour. Stir until totally mixed.

Line a 8″ square baking pan with parchment paper, and pour batter into the pan. Spread until the batter is even throughout.
Place in the refrigerator to cool.
In a separate bowl, melt your chocolate chips in the microwave. Add almond butter and mix!
Remove batter from the refrigerator, and pour chocolate over the batter. Spread evenly!
Place back in the refrigerator and cool for 1-2 hours before cutting.
Slice and serve!

For even firmer results, place in the freezer! You can also do a double chocolate layer and pour the chocolate spread under and on top of the almond batter.

This recipe can also be used to make peanut butter cups!
If you want to eat immediately, refrigerate and eat after an hour or two. But it will melt quick! For best results, FREEZE!!

Pumpkin Chia Pudding

It’s October, and as pumpkins line the grocery stores and homes on my street, it also fills my cabinets and refrigerator. I love making classic pumpkin dishes like roast pumpkin, pumpkin pie, and pumpkin bread, but it’s also fun to incorporate pumpkin into my everyday, year-round recipes! One of my favorite recipes to incorporate seasonal flavors into is my Chia Seed pudding! When you make the pudding parfait style you can play around with the different layers, and given the time of year, I figured a Pumpkin Chia Seed Pudding Parfait sounded just right.

What You Will Need:
2 C Unsweetened Vanilla Hemp Milk
6 T Chia Seeds
1T Maple Syrup
1/2 tsp Vanilla
1/2 C Pumpkin
Dash of Cinnamon
Handful of Enjoy Life Chocolate Chips

What You Will Do:
Pour maple syrup, chia seeds, and vanilla into your bowl of hemp milk and stir.
Place in a refrigerator for minimum 1-2 hours. I like making the recipe before I go to bed, and eating it in the morning!
When your pudding is done, pour half of the pudding in a jar. Add 1/4C pumpkin. Add the second half of the pudding, and the second half of the pumpkin. Top with chocolate chips!!
Mix it all together and eat up! Or, if you’re a purist like myself, eat it layer by layer!

This recipe serves 2 people and although it may not seem like it, it totally fills you up! Enjoy!

Eat Organix

I’ve tried many meal delivery services in the past, and I can’t say I’ve found many that I love. Why? Well, many reasons. First, I’m intolerant to more than just gluten. I’m intolerant to gluten, dairy, soy, chickpeas, cashews, lentils and a few other random foods. In the past I’ve found that most meal services cater to just one of my intolerances (just gluten-free, or just dairy-free), or I’ll inevitably run into one of my sneakier intolerance as a side in the dish. Second, portion size! I don’t know about y’all, but I’m a hungry girl, and often meal service dishes are way too small and I eat the lunch and dinner meal by 3PM! And for the sake of keeping my list short, my last grievance is the quality. Sometimes the food just sucks!

Well that all changed when I discovered Eat Organix. Eat Organix is an organic, gluten free, farm-to-table meal delivery service located in Los Angeles that delivers meals comprised of fresh, local ingredients right to your door. Delivery is twice a week on Sunday and Wednesday evenings from 8pm-6am and each delivery consists of three days worth of food.

So why do I like Eat Organix and complain about all the others? First, the customization. Not only do you list ALL of your dietary preferences (GF, DF, vegan etc), but you then are asked to select 4 more foods or categories that you straight up DON’T LIKE! What did I check off? EGGPLANT, lentils, chickpeas, and duck. This way Eat Organix didn’t waste any food by serving me something I wasn’t going to eat.

The meals are HEALTHY, and more importantly, FILLING. From a Ground Beef Hamburger Mac (#nobread) with a quinoa, squash, and macaroni pasta on the side for dinner to a Flaked Cod Salad with tomato, green bell, corn and red onion salsa with sweet potato side for lunch, each meal had me satiated and fulfilled. Not only is the food of the highest quality, but everything from their menus and container to the ice packs used in their delivery bags are non-toxic and reusable.

Oh, and before I forget, one other feature I really liked was that you can let Eat Organix know what your goals are for the program– Weight Loss, Stay on Track, Fitness. This way they can really customize the amounts of proteins, fats, starches etc and tailor the program totally to your goals.
