Whipped Matcha

Also called, Dalgona! The wildest food trend I’ve seen this quarantine has to be Whipped Coffee. I mean, has it always been a thing?! Because it has seriously taken social media by storm! Well we all know I don’t drink coffee, and I’m a matcha fiend, so it was only a matter of days before I tried to make my own version.

Okay let’s be clear. I saw countless Whipped Coffee social posts, and even several Whipped Matcha posts, and everyone made it look EASYYYY. Fact check: it’s not. You must, I repeat MUST, use an electronic mixer! I thought I’d be able to whisk by hand but that was a total fail, and using a matcha frother was also a fail, although I did make a little bit of progress with it. Once I stepped up my game and found my electronic high-speed mixer, the recipe was a cinch!!

Not only is this recipe gluten-free, but it is also dairy-free and can totally be made vegan! The vegan version uses chickpeas, and sadly I’m allergic so I am not able to give it a go!

Get ready, everyone! You’re in for a treat.

What You Will Need:
2 Egg Whites
1/2 Tablespoon Matcha
1 Tablespoon Water
1 Tablespoon Coconut Sugar

What You Will Do: 

  • Add two egg whites to a bowl. Using an electronic mixer, whisk on HIGH for 5-8 minutes. Before I go on, I want to note that I tried making this several times without the electronic mixer and it failed each time! People seem to make it work, but they must have magic arms or something! 
  • Once the egg whites are fluffy and foamy, set aside.

  • In a separate bowl, add 1 T of BOILED water, 1/2 T matcha, and 1 T coconut sugar (you can use monk fruit, cane sugar etc). Whisk together until all clumps of matcha and sugar are dissolved.

  • Slowly, I repeat, SLOWLY, pour your matcha mixture into the egg white bowl, mixing with the electronic mixer as you go. Once the two are incorporated, continue mixing for a few minutes more to maintain the foamy-ness/fluffy-ness of the Dalgona.
  • Fill a cup half way with ice, and pour in a nut milk of your choosing. Fill the glass about 3/4 of the way. Slowly, AGAIN slowly, scoop the whipped matcha on top of the glass, filling it to the top.
  • Sprinkle with a little more matcha on top and ENJOY!
  • Drink it as is, OR mix the whipped matcha into your iced nut milk and drink it combined.

Vegan Option:
1. Sub Egg Whites for the water from a can of chickpeas. Whisking chickpea water together is called aquafaba.

Maple Roasted Brussels Sprouts with Ocean Spray Craisins® Dried Cranberries

Who else is SO excited for Thanksgiving and the upcoming holiday season!? Every year I’m in charge of my family’s menu, and EVERY year my Maple Roasted Brussels Sprouts grace the menu. This year, however, I have an exciting new twist on my classic recipe.  The twist? Ocean Spray Craisins® Dried Cranberries! The cranberries are made with REAL fruit, #glutenfree, and add the perfect pop of flavor. I didn’t think my recipe could get any better! Without further ado, enjoy! 

Maple Roasted Brussels Sprouts Recipe:

½ lb Brussels Sprouts
2 T Cup Coconut Oil
2 T Maple Syrup
¼ Cup Pecans
¼ Cup Craisins® Dried Cranberries
Salt, pepper, CINNAMON

What You Will Do:

Preheat oven to 400 F.

To prepare the brussels sprouts- trim the stem end and remove the outermost leaves of the sprouts and cut in half. 

Add to a baking sheet lined with parchment paper. Top with 2T coconut oil and cook at 400 for 20 minutes and flip. Add 1 T of maple syrup, pecans, Craisins® Dried Cranberries, cinnamon, salt and pepper. Cook for 15 more mins. TASTE. Add 1T more maple, cinnamon, etc. Cook for 10 more minutes, or until desired level of crisp. 

Serve!

 

CINNABUN Trader Joe’s Cauliflower Gnocchi

The Trader Joe’s Cauliflower Gnocchi QUEEN is back at it again! And this, my friends, might be my best yet. For all who are like me and drool over gluten-free, dairy-free Cinnabun recipes online, but don’t have the time to make them (they’re tough to master!!) this is the perfect, and HEALTHIER, alternative!! Savory meets sweet, and I cannot wait for you all to try it!

What You Will Need:
1 Bag Trader Joe’s Cauliflower Gnocchi
1.5 T Coconut Oil (melted)
2 T Coconut Sugar
Cinnamon

What You Will Do:
Melt 1 T coconut oil in a bowl and toss in 2 T coconut sugar. Stir!
Add the other .5 T coconut oil to the heated skillet.
Add the coconut oil/sugar mixture to the heated skillet.
Add bag of FROZEN TJ’s Gnocchi.
Let is cook for a few minutes until it starts to brown. Flip and mix.
As both sides start to brown, add cinnamon! Amount is up to you… I went pretty heavy!
Let the gnocchi sauté until it is the desired crispiness and serve!

OOEY GOOEY Chocolate Chip Cookies

Introducing the best recipe I have EVER made on NOBREAD. Bold statement, I know, but it’s TRUE. These OOEY GOOEY Chocolate Chip Cookies are PALEO, VEGAN, and GLUTEN-FREE! Like, what?! Without further delay, here is the recipe! Enjoy!

What You Will Need:

  • 6 T Coconut Oil (melted)
  • 1/2 Cup Coconut Sugar
  • 2 T Almond Milk
  • 2 tsp  Vanilla Extract
  • 1/4 Cup Maple Syrup
  • 2 Cups Almond Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • Enjoy Life Foods Chocolate Chips Morsels (medium size)

What You Will Do:

In a large bowl, combine almond flour, baking soda, baking powder, coconut sugar, and salt.

In a small bowl, combine melted coconut oil, maple syrup, almond milk, and vanilla.

Pour bowl of wet ingredients into the large bowl of dry ingredients and combine.

Add chocolate chips… I go extra chocolatey!

Line a baking sheet with parchment paper and spray it with coconut oil. Take a spoonful of dough and place on parchment paper.

Bake at 350 degrees F for 9 minutes. Remove and let cool! ENJOY!!
** as badly as you want to eat them STRAIGHT out of the oven, you have to let them cool so they don’t fall apart. They will still be super super gooey!!

Warning- These cookies will melt in your mouth and you WILL be addicted. xo

Pomi USA Zoodles!

When I first went gluten-free, I essentially went Italian-free. GF pastas ten years ago weren’t the same as they are today, so I kissed pasta, pizza, chicken parm and more goodbye. In doing so, I kissed tomato sauce goodbye, too! WELLLL, thankfully the GF industry has totally changed, and not only are the pasta and pizza alternatives of today more delicious than their gluten-filled counterparts, but my cooking game in general has gotten A LOT more creative. Let’s just say tomato sauce is BACK in my life and I am so thankful.

Pomi is also super low in salt, and I’ll cut right to it- frickin delicious! I’ve been using their sauce on anything from my Cauliflower Gnocchi to my newest obsession- Zoodles! Today I’m sharing my go-to meal with you all 🙂

What You Will Need:

3 Cups Zoodles
1 T Olive or Avocado Oil
2 T – 4 T Pomi Sauce (Organic Strained)
2 T Pine nuts
Optional: meatballs or falafels (#glutenfree, of course)

What You Will Do:

Add 1 T oil to a heated skillet and add zoodles and pine nuts.
Stir as you cook for 3 minutes… 4 MAX.
Add sauce to the skillet with one minute remaining, or add your sauce after plating your zoodles!
Serve and enjoy!
I tend to top my pasta dish with meatballs or falafels, or I sip a glass of bone broth with it!

Plantain Chips – 2 Ways!

I LOVE PLANTAINS! I don’t say it enough and I don’t eat them enough. But when I am in Mexico, I AM a plantain. Ever since I purchased an air fryer, I am having a BLAST fryer all of my faves. And then it dawned on me… why purchase plantain chips when I can make my own?! And ensure they are healthy and delicious! This recipe is my new addiction. You’ve been warned…

What You Will Need:
1 medium sized plantain
1 tbsp coconut oil
dash of pink himalayan salt
avocado & vegan Chocolate to garnish

What You Will Do:

Preheat your airfryer to 390 degrees F
Cut off both ends of the plantain and take off the peel.
Cut the plantain into thin slivers with either a knife or a slicer. (I used a knife, but a slicer might be easier!)
Put the sliced plantains into a bowl and pour the melted coconut oil on top.
Put the plantains into the airfryer and top them with pink himalayan salt.
After the plantains have been cooking for 5 minutes, open up the fryer and toss them.
Close lip and cook for another 5 minutes or until the chips are at your desired level of crispiness.

For Sweet Plantains!
Sprinkle the plantains with cinnamon and a little more salt!
Melt your favorite chocolate and use as a dip! (You won’t regret this!)

For Savory Plantains!
Sprinkle a little more salt on the plantains.
Serve them with your favorite salsa or avocado!

Latte Tour of London

London is my absolute favorite city to travel to… I’ve been twice this year and I am already planning another trip back! I love it because of its energy, its people, oh… and its incredibly delicious food and rising wellness scene! My trip to London this last week was a whirlwind trip of fun and adventure, and LATTES! Each cafe seems to be one-upping the next with creative blends and nut-milk alternatives… and I am totally okay with it! Here are some of the lattes I enjoyed last week, and will continue to dream about until I return to my favorite city <3

Aida Shoreditch: I found pictures of their pink latte on Instagram prior to my trip and knew right away I had to make this spot my first stop. This pink drink is made from rose syrup, organic beetroot juice, nut milk, and dried rose petals. The coolest part about the cafe is that it is part cafe, part store! The store sells the coolest clothing and accessories… you had to drag me (and my wallet) out!

Glow Bar London: When I travel, I realize how spoiled I am by all of the amazing health and wellness facilities around me. Infrared saunas on every corner, cryotherapy centers, and cafes who boast their own, homemade nut milks is simply the norm! In asking my London friends for their “wellness oasis” spots in London, I discovered Glow Bar. AND OH MY GOD I AM SO HAPPY I DID.

The drinks: I wanted one of each, but my friend and I settled for three 😉 Pictured above are the Siren (Spirulina, Pearl, Marine Collagen),  Glow (Rose, Beetroot, Schisandra), and Chill (Macqui Berry, Ashwagandha, Lavender). Sip, SWEAT downstairs in their infrared saunas, and shop the best in wellness products! AN ABSOLUTE MUST!  

Jusu Brothers: This matcha latte with coconut milk was the most fresh/pure tasting matcha I had in London! I found this cafe on Instagram and was in awe of its natural light (a blogger’s dream) and delicious avocado food-porn. Enjoy your matcha latte with a gluten-free avocado toast and a few energy balls for dessert. This cafe is Tulum meets Bali… in London!

Farm Girl Cafe: I’d like to say I come to Farm Girl Cafe for its amazing retro vibe and mile high gluten-free avocado toast, but I really come here because they make the best lattes in town. This trip I went to town on the Blue Magic Matcha with almond milk and the Happy Hot Choc- cacao, date syrup, peppermint, matcha, CBD, and hazelnut milk. For the coffee drinkers, the rose latte is a must! FGC serves Rude Health nut milk… this is BY far the best nut milk sold in Europe… I asked for a cup of the hazelnut milk PLAIN!

Milk Beach Cafe: A latte too beautiful not to have. This pink masterpiece is made from Beetroot Powder, Chai Spices, and Oat Milk. It was so good I had two! I highly recommend pairing your latte with the Green Bowl, Scrambled eggs, avo, mushrooms, #nobread, gluten-free poke bowl, and acai bowl. OH, make sure you order the bacon… it was AMAZING!

Roasted Thanksgiving Vegetables

Yes Thanksgiving is all about the heavy (#glutenfree) stuffing, pies, and bread… but it is also the one holiday that features all of my favorite VEGETABLES!! Brussels sprouts, carrots, and butternut squash, OH MY! Today I am making my go-to Thanksgiving veggies and roasting them to utter Thanksgiving perfection.

What You Will Need:

5 Organic Long Carrots
½ lb brussels sprouts
1 lb cubed butternut squash
1/4 Cup coconut oil
2 Tbsp maple syrup
¼ Cup pecans
¼ cup dried cranberries
Salt, pepper, CINNAMON

What You Will Do:

Preheat oven to 400 F.

Prepare vegetables as follows: Carrots – peel, then cut in half lengthwise. Cut into shorter lengths if you would like! Brussels sprouts – trim the stem end and remove the outermost leaves and cut in half. Butternut Squash- buy cubes, and cut into smaller cubes (better for cooking).

Add veggies to a baking sheet lined with parchment paper. Top with coconut oil and ONE T maple syrup. Cook at 400 for 20 minutes and flip. Add your second tablespoon of maple syrup, pecans, cranberries, cinnamon, salt and pepper. Cook for 10 more mins. TASTE. Add more maple, cinnamon, etc IF YOU WOULD LIKE.  Cook for 5 more mins.

Serve!

CBD

IT’S HERE! IT’S HERE! My LONG awaited post on CBD!! I have been talking for at least 2-3 months now about my obsession with CBD and its game-changing benefits, and my inbox has been flooded with questions about it. Why do I love it so much? What are my favorite brands? Do I eat it or take it in a dropper? The questions go on! I’ve also been asked… WHEN ARE YOU PUBLISHING YOUR POST?!! WHAT’S TAKING SO LONG!!?

The reason why this post took me so long to write is because CBD is confusing AF, and I have tried SO many products and different forms of CBD that I wanted to properly experience all of the products before featuring them.

Let’s start with the basics! WTF is CBD?!

CBD stands for cannabidiol (the most famous cannabinoid is THC). Both CBD and THC come from cannabis, but only THC gets you high. Think of CBD as THC’s cute lil cousin.

It’s tough to give one standard definition of CBD, because it does something different for everyone. CBD is commonly used to provide pain and anxiety relief, help with insomnia and digestion, and act as an anti-inflammatory. It has also been used to treat a range of conditions including arthritis, cancer, and seizures!

According to Dr. Jonathan Leary, Concierge Wellness Doctor, “our internal system (endocannabinoid) is responsible for regulating homeostasis in our body. Think of this as our balance system. CBD enhances this system and it helps regulate balance more efficiently! When your body is more balanced it is less stressed (hence calming you down and helping you sleep) and it puts you in a more optimal healing state. Ideally, in the future I see people taking this every day, (almost like a multi vitamin) because of [how] powerful it is to have your body more in that eased state. Furthermore, one last huge benefit is that your body doesn’t adapt to the dosage… meaning if you take it every day you won’t have to keep increasing dosages like you would have to do with pain meds, for example.”

Dr. Leary couldn’t have summed it up better! CBD puts your body back in homeostasis (or keeps it there), and your body doesn’t build up a tolerance to its amazing benefits.

CBD can be taken as a concentrated oil, cream, in food and drinks, as pills, in vapes, shampoos and more! Creams and balms can be rubbed directly on the skin (great for pain relief) and CBD oils are ingested orally.

Is it legal!? Most states allow CBD products in some form, usually for medical purposes. States that have legalized marijuana view CBD products as legal, too, and there are only four states that consider all cannabis-derived products, including CBD, to be illegal: Kansas, Idaho, Nebraska, and South Dakota.

What has MY personal experience with CBD been like? The two biggest areas I’ve noticed the direct impact of taking CBD are on my anxiety and my digestion. After my first ever CBD experience, I immediately went to the bathroom. LIKE WHAT?! Literally within 30 minutes of taking it. And we all know digestion is my biggest issue. I have long struggled with anxiety, too. My heart races and I am agitated/full of brain fog. I used to be a HUGE weed girl to calm my anxiety, and the way people joke “I need a drink,” I believed “I need a hit.” Since starting CBD I haven’t touched weed. I feel chill and calm and my anxiety has significantly improved.

People always say to me, “if it helps with sleep, why do you take it in the morning? Doesn’t it make you drowsy?” To which I reference what Dr. Leary said earlier. CBD brings your body back into homeostasis, so if you are having trouble sleeping, it is because you are out of homeostasis. CBD brings you back to a state where your body functions better and therefore when you go to sleep at night, your body is capable of having a better night sleep. There is NO component in the drug (for lack of better word) that will give you a drowsy side effect, unless the CBD is paired with a calming agent like ashwaganda etc.

1.5 Cup Unsweetened Almond Milk
2 scoops Vital Proteins Marine Collagen
1/2 Avocado
Handful of Spinach and Kale
1/4 Cup Raspberries
3 cucumber slices
Squeeze of Lemon

Cacao Avocado Pudding

Growing up I had a pudding cup in my lunch bag every day. Which explains why I am a total chocaholic now! Since going gluten and dairy-free, I haven’t had pudding! Well, it dawned on me. I use avocados in my smoothies to make my smoothies extra creamy, so why not use them with a little cacao to make my dream pudding bowl. Four ingredients later, my dream pudding bowl had been made!
What You Will Need:
2 Avocados
1/2 Cup Cacao Powder
1/4C Maple Syrup
1/2C + 2T Unsweetened Almond Milk
Pinch of Salt
1tsp Vanilla
What You Will Do:
Slice two avocados and add to a blender or Vitamix.
Add Cacao Powder, Maple Syrup, Almond Milk, Salt, and Vanilla.

Blend on high, pausing here and there to scrape down the sides of the blender if need be.
Pour into a bowl, and add your toppings! I added Banana Slices and Cacao Nibs.
Enjoy!
 
I like my pudding as is, and use toppings as a way of adding sweetness to the pudding. But if you like things EXTRA sweet like my assistant, add a little more maple syrup on top and stir it in!
This recipe makes 4 servings! 

Matcha Latte made with Califia Farms Creamer

When people think of NOBREAD and I, they think of smoothies and MATCHA LATTES.

…And I don’t hate it. Funny enough, until I mastered making matcha myself, I always bought my lattes at cafes. I mean I tried to make them myself! But they never turned out as good as the ones from my favorite cafes. Well thanks to Califia Farms nut milks and creamers, this matcha addict has learned how to master the craft.

What You Will Need:
1.5C Unsweetened Vanilla Califia Farms Milk
1-2T Califia Farms Almond Milk Creamer
1tsp Matcha or Turmeric… whichever suits your mood!

What You Will Do:

Heat your nut milk on the stove or in the microwave for 3 minutes. Add to blender.
Add your creamer and matcha OR turmeric.
Blend on high for 20 seconds or so, and serve!

Note: The cute little cinnamon decorations on top that you see in the photo below are made with the help of a latte stencil!!
