OOEY GOOEY Chocolate Chip Cookies

Introducing the best recipe I have EVER made on NOBREAD. Bold statement, I know, but it’s TRUE. These OOEY GOOEY Chocolate Chip Cookies are PALEO, VEGAN, and GLUTEN-FREE! Like, what?! Without further delay, here is the recipe! Enjoy!

What You Will Need:

  • 6 T Coconut Oil (melted)
  • 1/2 Cup Coconut Sugar
  • 2 T Almond Milk
  • 2 tsp  Vanilla Extract
  • 1/4 Cup Maple Syrup
  • 2 Cups Almond Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • Enjoy Life Foods Chocolate Chips Morsels (medium size)

What You Will Do:

In a large bowl, combine almond flour, baking soda, baking powder, coconut sugar, and salt.

In a small bowl, combine melted coconut oil, maple syrup, almond milk, and vanilla.

Pour bowl of wet ingredients into the large bowl of dry ingredients and combine.

Add chocolate chips… I go extra chocolatey!

Line a baking sheet with parchment paper and spray it with coconut oil. Take a spoonful of dough and place on parchment paper.

Bake at 350 degrees F for 9 minutes. Remove and let cool! ENJOY!!
** as badly as you want to eat them STRAIGHT out of the oven, you have to let them cool so they don’t fall apart. They will still be super super gooey!!

Warning- These cookies will melt in your mouth and you WILL be addicted. xo

Vegan Sweet Potato Cookies

At NOBREAD we are constantly looking to develop recipes that satisfy both our gluten-free AND vegan followers. We’ve made smoothies and pancakes out of sweet potatoes, and the recipes have been some of our favorites, so this week we decided to turn our favorite root into cookies! These addicting little cookies satisfy all of our needs. They are also super kid friendly! Because sweet potatoes are sweet to begin with, we didn’t even have to add that much (NATURAL) sugar! Enjoy our latest obsession!
What You Will Need:
 2 cups of boiled sweet potatoes
1/3 cup maple syrup
1 cup almond flour
1T coconut oil
A dash of cinnamon
A dash of nutmeg
1 tsp of Vanilla extract
Handful of chocolate chips
What You Will Do:
Preheat oven to 350 degrees.
Peel sweet potatoes.
In a large pot, bring 3 cups of water to boil, add sweet potatoes, and cook for five minutes.
Mash sweet potatoes until smooth.
In a food processor combine everything but the chocolate chips.
Pulse until smooth, periodically using a spatula to mix.
Roll a tablespoon-size ball of dough in your hands, and place onto a lined baking sheet. Press the ball down a bit so it flattens. *Mix will stick to your hands a bit.
Sprinkle chocolate chips to the top of each cookie.
*DON’T put the chocolate chips IN the cookies… the warmth of the batter will cause them to melt instantly! 
Bake for 20 minutes, then broil on high for one-two minutes.
Let cool for 15 minutes, then enjoy!
The cookies are SO delicious and the best way, in our opinion, to incorporate vitamins into your dessert! Packed with Vitamins A, C, B, and fiber, there is no over-doing on these healthy cookies!

Peanut Butter Coconut Cookie Dough Balls made with Earth Balance

Ever since I went to Cookie Do in New York City and had their vegan and gluten-free Peanut Butter Chocolate Chip Cookie Dough, I’ve been dying to recreate it in my kitchen! Their cookie dough was ABSURDLY good, but also absurdly unhealthy, ha!

When I was at Do recently, I noticed that there were several gluten-free flavors, but only one gluten-free and vegan flavor. When I asked why all flavors of GF dough weren’t vegan, I was told the others contained butter! So first and foremost I decided that a dairy-free/vegan butter would be one of the main ingredients in my NOBREAD dough. Introducing Earth Balance, my go-to dairy-free butter!

Earth Balance was founded in 1998, and it’s introduction gave vegans and dairy-free folk faith that they would be able to enjoy ‘butter’ again. EB has quickly become the US’s most popular vegan buttery spread, and the butter family has grown outside of their Original flavor and now includes Soy-free, Organic Whipped, Olive Oil, Omega 3, and Organic Coconut Spread. Thus far, I’ve tried all except the Omega-3 and Organic Coconut Spread, but given I am a Coconut-addict I know it’ll be just days before I give the Coconut spread a try!

Peanut Butter Coconut Cookie Dough Balls

What You Will Need:
1/4 Cup Peanut Butter
1/4 Cup (4T) Earth Balance DF/Vegan Whipped Butter (Melted)
1/2 Cup coconut Flour
1/4 Cup Coconut Sugar
1/2 tsp Vanilla
Handful Chocolate Chips

What You Will Do:
In a large bowl, mix peanut butter, melted Earth Balance, and vanilla.
In a small bowl, combine coconut flour and coconut sugar.


Add your dry ingredients into the bowl of wet ingredients and combine.
Add however many chocolate chips you desire and fold!
Note: The batter will crumble. Don’t be alarmed. Time to get messy.

With your hands, scoop out batter and create small dough balls.
Add your balls to a tray lined with parchment paper. You should be able to make ~12 balls.
Place in the refrigerator so the dough comes together. Chill for 20 minutes and serve!

The dough balls will stay good in your refrigerator for a week or so, and then (if there are any left) move them to the freezer!

Earth Balance vegan butters have been HUGE not only for my recipes, but also in my day-to day life. I’m a toasted (gluten-free) bagel and croissant kind of girl, but I need my DF butter to make my meal complete and Earth Balance spreads absolutely do the trick.

Peanut Butter Marshmallow Cookies

Marshmallows were one of my favorite foods growing up, but when I was diagnosed with all of my food intolerances I gave them up! Why? Well, do we really know what is in a marshmallow? And given I had SO many intolerances, I gave up every food that contained more than one or two ingredients. Nowadays, as I’ve learned how to handle my intolerances a bit more, and marshmallows have become more allergy friendly, I’m happy to say they are back in my life.

Today I decided to change up my recipes a bit… AKA forego chocolate from the recipe, and I made these peanut butter marshmallow cookies! These cookies are simple to make, big in size, and will totally warm your heart this holiday season.

What You Will Need:

  • 1 cup gluten-free all purpose flour
  • 2/3 cup peanut butter
  • 1 large egg
  • 1/3 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Mini marshmallows!

What You Will Do:

  • In a large bowl, combine granulated sugar, brown sugar, baking soda, salt, and all purpose flour.
  • Separately melt butter in a small bowl. Crack egg in the bowl, and whisk the two together.

  • Add peanut butter to the wet ingredients, and mix until smooth. Lastly, add the vanilla.
  • Slowly pour wet ingredients into dry ingredients and stir/fold until smooth.

  • Create 12 balls out of the dough, and then flatten each ball into a circular cookie shape.
  • Top 6 of these cookies with marshmallows.
  • Take the 6 cookies that are NOT topped with marshmallows, and place them on top of the marshmallow cookies. Press the two cookies together so the marshmallows are stuffed inside.

  • You will now have 6 large cookies!
  • Top each cookie with a marshmallow or two.
  • Place cookies on parchment paper and put the tray into the oven. Cook for ~10 minutes, or until the bottom of the cookies are a light golden brown. Cook at 375 F.
  • Remove and let the cookies cool for at least 20 minutes… otherwise they will crumble immediately!
  • Take a bite, and enjoy!

Flourless Almond Butter Chocolate Chip Cookies

I received SO much positive feedback on my post about Peanut Butter Chocolate Chip Cookies,  but also a few questions. “Peanuts are one of the most common allergens out there, can this recipe be done with Almond Butter?” The answer is YES! And I’m tempted to say the Almond Butter recipe is a bit tastier!

I also noted in my Peanut Butter Chocolate Chip Cookie recipe that the bigger the cookie, the harder it was for the cookie to stay together, so this time around I decided to make smaller, bite sized cookies! The result? Firmer and crispier cookies that makes indulging fun and guilt-free.

What You Will Need:
1 Cup Almond Butter
1/3 Cup Coconut Sugar
1 Egg
1 tsp Baking Soda
Vegan Chocolate Chips of your choosing!

What You Will Do:
Combine Almond butter, Brown Sugar, Egg, and Baking Soda in a large bowl.
Once mixed, add your chocolate chips and fold into the batter!
Place a sheet of parchment paper on a baking tray and scoop small-size balls of batter onto the tray.
Bake on 350 for ~9 minutes for softer cookies, and ~11 minutes if you want crispier cookies!

That’s it! You’re done! This recipe yields 50-60 cookies with a 1-1.5″ diameter, or 12-15 cookies if you make them a bit bigger! It is the perfect after school snack for your kids and their friends, or for yourself when you desire a small, sweet bite after a meal.

Enjoy Life Peanut Butter Chocolate Chip Cookies

It’s National Chocolate Chip Day! So I’m obviously cooking up some delicious, chocolatey treats! When it comes to chocolate, as my loyal followers can attest, there is only one brand I use- Enjoy Life Foods. Enjoy Life Chocolate Chips are my savior. The chocolate comes in Mega Chunks, Mini Chips, and Dark Chocolate Morsels, and like all other Enjoy Life products, they are free of the 8 most common allergens!

Gluten-free and dairy-free chocolate chip cookies are my favorite treats to make, but today I’m spicing it up a bit. So what’s on the menu? Peanut Butter Chocolate Chip Cookies! And the best part? It requires few ingredients and little time to make!

What You Will Need:
1 Cup Peanut Butter
1 Cup Brown Sugar
1 Egg
1 Tbsp Vegetable/Olive Oil
1 Tbsp Vanilla
1 tsp Baking Soda
1 Cup Enjoy Life Chocolate Chips!

What You Will Do:

Preheat oven at 350 degrees.
In a large bowl, mix peanut butter and brown sugar.
Add egg, olive oil, vanilla, and baking soda.
Mix all together until batter is smooth.
Pour in your chocolate chips and ‘fold’ into the batter. (You don’t have to add a full cup if you don’t want to! But I say the more chocolate the better!)
Place parchment paper on a tray.
Scoop batter into cookie form. (Due to the lack of flour, you may have to press/shape the cookies into form).
** Make cookies 1-2 inches in diameter. The smaller the better, otherwise they will break!
Cook for 10 minutes at 350 degrees.
Let cookies cool for 20 minutes! This is super important! Due to the lack of flour, it is important that the cookies cool and firm. If you eat them while they are hot, they will break apart a bit too quick.

Let’s take it one step further! Melt your remaining Enjoy Life Chocolate Chips in a microwavable bowl (60-90 seconds). Stack your cookies and pour your chocolate on top! And that my friends, is how to celebrate National Chocolate Chip day right!

Vegan Coconut Chocolate Chip Cookies

I’m kind of addicted to chocolate. Soft baked chocolate chip cookies were my childhood vice, and since going gluten-free, I’m glad to report that nothing has changed. Well, as many of you are aware, it’s tough to find gluten-free cookies that taste as delicious as gluten-filled cookies. Oh, and if you’re looking for gluten-free AND vegan cookies, forget about it! Well, I’m happy to report that I, if I do say so myself, have mastered the ultimate gluten-free and vegan chocolate chip cookie. What’s my secret, you ask? Coconut!

Ingredients:

  • 1/2 Cup Coconut Oil
  • 1 Cup Coconut Sugar
  • 1/2 Cup Coconut Milk
  • 1 Tablespoon Vanilla Extract
  • 2 Cups Bob Red’s Mill All-Purpose Gluten-Free Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1/4 Cup Enjoy Life Foods Chocolate Chips Morsels

What to do:

  • Melt your coconut oil and mix with brown sugar in a large bowl.
  • Add in SILK Coconut Milk and stir until the 3 are as blended as possible.
  • In a separate bowl, combine Bob’s Gluten-Free Flour, Baking Soda, Baking Powder, Salt, and Vanilla.
  • Pour liquid mix of coconut oil, brown sugar, and SILK Coconut Milk into the bowl containing flour etc.
  • MIX IT UP!
  • Add Enjoy Life Chocolate Chip morsels and mix again!
  • With your combined mix, make little balls with the dough and place on an un-greased cookie sheet. Note: The balls will flatten so err on the side of making smaller cookies.
  • Cook for 9 minutes at 350. Take out and let cool for 5-7 minutes.

Want to make a Gluten-Free Cookie Sandwich??

  • Melt dairy-free icing or nut butter (10 seconds in the microwave)
  • Spread on back side of one cookie. Take a second cookie and sandwich the two together!

These Coconut Chocolate Chip Cookies are easy to make, healthy (enough), and delicious! All they take are a few GF ingredients, a little bit of time, and a lot of love!

Peanut Butter Chocolate Chip Cookie

Nutrition (All batter):

  • Calories: 332.5
  • Fat: 11 g
  • Carbs: 39.75 g
  • Protein: 21.5 g

Ingredients:

  • 1 egg
  • 2 tbsp of applesauce
  • ½ tbsp. of Enjoy Life Semi Sweet Chocolate Chips
  • 1/3 cup of Bob’s Red Mill Gluten Free Oat Flour
  • 2 tbsp of powdered peanut butter

Directions:

  1. Combine all ingredients into a bowl and stir until a batter-like consistency is reached
  2. Pour and spread onto a plate in desired size/shape
  3. Place the plate in the microwave for 40 seconds

There is a common misconception that gluten-free products are all healthier than their gluten-filled counterparts, but in reality many processed GF foods contain more fat and sugar to make up for the lack of gluten. I’ve tried just about every brand of GF dessert, and from the best gluten-free chocolate chip cookie to the best gluten-free doughnut, I have a favorite brand for each.
